REAL is seeking a highly motivated Lab Technician to join our growing team. This is a hands-on role at the centre of our laboratory and fermentation operations. If you are passionate about science, meticulous by nature, and excited by the world of fermentation and production, we’d love to hear from you. We are looking for someone local, reliable, able to arrive on time, and willing to stay late when required to support production or critical lab work. This role is ideal for someone who takes pride in being clean, organised and precise, and who has a “get the job done” mindset. Must have the right to work in the UK without sponsorship. Key Responsibilities 1. Laboratory Management • Maintain a clean, hygienic, organised and efficient laboratory environment, • Manage stock levels, ordering and procurement, • Oversee equipment calibration, maintenance and upkeep, • Prepare and maintain all laboratory stock solutions, • Build and manage the laboratory budget and report on spend2. Lab Processes, • Learn, maintain and develop up-to-date laboratory SOPs, • Train team members on SOPs and proper equipment usage, • Monitor team adherence to procedures and provide retraining where needed, • Carry out and deliver on production led laboratory analysis in an efficient and timely manner3. Laboratory Development, • Identify opportunities to improve laboratory systems and workflows, • Recommend new equipment with supporting business cases (benefits, cost analysis, etc.)4. Microbial Culture Propagation, • Store and maintain frozen microbial cultures; regrow and prepare as required, • Conduct cellular plating and propagation to the production schedule, • Full responsibility for microbial strains from initial bead → 50L propagation, • Oversee growth, viability, health and quality of primary and secondary cultures5. Day-to-Day Testing & Quality Control, • Perform microbiological testing on brews and primary cultures alongside the Lead Fermenter, • Conduct testing, plating and analysis to enable Positive Release; report outcomes to the Head of Production, • Perform bottling QCP analysis, • Support monitoring of brew development and performance6. Shelf-Life Management, • Manage shelf-life inventory and carry out scheduled testing, • Oversee correct storage conditions, • Conduct monthly shelf-life tastings and report insights with the Director and Lead Fermenter7. Problem Solving & Analytical Support, • Conduct chemical and microbiological analysis relating to quality issues in core products, • Lead problem-solving investigations and report findings, • Support NPD projects with lab-based analysis where required8. R&D Support, • Provide laboratory support for R&D trials and experiments, • Work closely with the Director of Innovation when needed9.
