The Pastry Chef De Partie reports to the Sous chef and works with other line chefs to produce quality food following the standards and procedures. R E S P O N S I B I L I T I E S o To supply the highest level of customer care and service whether in the public eye or in the back areas. o Prepare, cook, and serve any food delegated as your responsibility ensuring that the highest possible quality is maintained and that agreed standards for food preparation and presentation are met at all times. o To adhere to company procedures in regards to temperature checks, food labeling and dating, cleaning schedules, and hygiene regulations at all times and ensure that all records of such are updated and kept. o To assist with the acceptance and storage of deliveries and that all relevant company procedures are adhered to. o Ensure and maintain the work area clean, hygienic, and tidy state at all times. o To wear the full and correct uniform at all times whether in the public eye or back areas. o To have an understanding of menu planning, writing, and the implementation of stock controls and how this enables the kitchen to meet Gross Profit %. o To be familiar with the opening and closing procedures of the kitchen and carry them out as rotated. o To assist and ensure the junior chefs carry out daily and weekly procedures including temperature checks, food labeling/dating, and storage and to ensure records of such are up to date. o Ensure that temperature checks are carried out a minimum of 5 times per day and recorded.

Who are you? This role would be perfect for you, if you have a good understanding of how the cleaning industry works with a high level of experience and exposure to working practices, reporting, planning, and logistics. You will have had firsthand experience with cleaning, communicating with multiple teams across different sites, and had full ownership of quality assurance for both scheduled tasks and priority client requests. You will be able to demonstrate thorough critical thinking skills considering both the finer details and the bigger picture. On a more personal level, you will love working evenings and be flexible with finishing time. Working patterns do not have to consist of 5 days a week (Monday - Friday) - we are more than happy to accomodate any number of evenings. Work life balance is important to us. What we're looking for Essential criteria 1. Senior experience in cleaning / facilities management company (2 years). 2. Excellent communications skills, both written and verbal (English & Spanish). 3. Natural ability to adapt to the needs of team members to get the best outcome. 4. Ability to demonstrate fantastic problem-solving skills and take initiative, ensuring that long terms solutions are sought, and learnings are shared. 5. Have a passion for consistently producing exceptional results, with exceptional diligence. 6. Strong leadership style, encouraging the right working practices, and holding people accountable. 7. Tech savvy and proficient with operating systems such as Microsoft and iOS. Confident with technology and able to help colleagues when they struggle with using technology / our app during the course of their work. 8. SERVICE R E S P O N S I B I L I T I E S - Assist the Waiters, hostess/ host to seat the customers - Great the guests and take the drinks order - Place the drinks order - Serve the drinks, explain the menu and specials if any - Let the Headwaiter know if any requirement or specifics mentioned by the table before he takes the order - Once the order taken check the mise en place needed and place it on the table using the service plate - Assist the headwaiter to serve the food when it arrives - Before clearing a table always check that it has been called away on Micros - Once the mains courses are finished clear the table, crumb and refresh the table cloth using the Rotolino method - Bring the dessert menus and announce the specials if any - Take the desserts and coffee order and place it on Micros (always ask the guest if they’d like the coffees with or after desserts) - Once the desserts are finished clear them - When the guests ask for the bill always double check with the headwaiter and sommelier in case the wine check and bill check hasn’t been done before dropping it on the table
