    The Birds Nest, Brixton is looking for a reliable, switched-on Bartender to join our small front-of-house team. We are an independent rooftop restaurant and venue in Brixton, with a pizza-led menu, cocktails, wine, beer, coffee, smoothies, indoor and outdoor dining spaces, and a warm, intimate atmosphere. This is a hands-on bartender role. Previous cocktail-making experience is essential. We are looking for someone who is confident making cocktails, following house specs, working cleanly, staying organised under pressure, and delivering consistent drinks during busy service. The bar will be your main station, but because we are a small team, you will also be expected to support the floor when needed. Key Responsibilities • Prepare cocktails, wine, beer, soft drinks, coffee and smoothies to spec, • Make cocktails accurately, consistently and confidently, • Follow house specs, measures and presentation standards, • Keep the bar clean, stocked and organised throughout service, • Polish and manage glassware, • Prepare garnishes and basic bar prep, • Restock fridges, shelves and service areas, • Communicate clearly when stock is low, drinks are delayed or support is needed, • Support the floor by running drinks and food when required, • Clear, reset and help maintain tables when the team needs support, • Follow health, safety and licensing standards, • Help protect the warm, controlled and restaurant-led atmosphere of the venue What We Are Looking For • Previous cocktail-making experience is essential, • Confident making classic cocktails and following house specs, • Comfortable working a busy bar service, • Reliable, punctual and professional, • Available to work regular evenings and weekends, • Clean, tidy and organised in the way you work, • Calm and focused during busy periods, • Willing to learn our drinks list, wine, beer, coffee, smoothies and service standards, • Comfortable taking direction from senior team members, • Confident helping on the floor when needed, • A clear communicator with the bar, floor and kitchen team, • Team-first, with no “that’s not my job” attitude Availability Evening and weekend availability is essential.     The Group Pastry Chef leads the pastry function across all Pachamama Group venues, including, Zephyr (London & Monaco), Bottarga, Nina, Lagana, and Soraya. This role is responsible for menu development, consistency, cost control, and team performance, while ensuring that each concept maintains its own identity. A key responsibility is to protect and respect the existing recipes and established pastry direction of the group, ensuring consistency across all sites. Any evolution or innovation must align with the group's standards and be implemented in a controlled and structured way. Responsibilities Menu Development & Creativity • Develop and implement seasonal dessert menus across all venues., • Adapt menus to reflect each concept's identity (Italian, Greek, Mediterranean influences)., • Refine existing desserts without compromising their original intent., • Lead R&D for new products (soft serve, plated desserts, bakery, retail). Recipe Integrity & Consistency • Maintain and enforce all existing group recipes as the foundation of the pastry offering., • Ensure consistency in execution, taste, and presentation across all sites., • Implement any recipe changes only after validation and approval., • Standardise all recipes in clear, scalable formats (grams, methods, service steps). Operational Excellence • Implement and maintain SOPs for all pastry sections., • Ensure recipes are efficient, practical, and service-friendly., • Improve workflows to increase productivity and reduce waste., • Support all kitchens in maintaining high daily standards.
