Position: Food & Beverage Manager Location: Rural Perthshire, Scotland Salary : £36000 - £39000 dependant on experience Job Summary: A thriving 4-star hotel in rural Perthshire, set within the stunning Scottish Highlands, is seeking an experienced and dynamic Food & Beverage Manager to lead its F&B operations. The property offers a diverse and high-quality culinary experience that attracts both residents and non-residents alike across different outlets and multiple areas offering an extensive drinks programme throughout the day and evening. With over 45 bedrooms on-site, as well as a significant number of additional accommodation units on the wider estate and surrounding area, this is a high-volume and fast-paced operation that extends well beyond in-house occupancy. The food offering spans breakfast, lunch, afternoon tea and dinner, making it a key dining destination for both locals and visitors. This role is pivotal in driving standards, refining the offering, and positioning the venue as a leading hospitality destination in Scotland. Key Responsibilities Operational Management: Oversee all F&B operations, including breakfast, lunch, afternoon tea and dinner. Ensure seamless and efficient service delivery across all dining and bar outlets. Manage and coordinate F&B offerings for residents, extended-stay guests, and non-residents, consistently exceeding expectations. Team Leadership: Recruit, train, and lead the F&B team, fostering a culture of excellence, collaboration, and guest focus. Work closely with the Head Chef to ensure strong alignment between front-of-house and kitchen operations. Guest Experience: Drive exceptional guest satisfaction by maintaining consistently high standards across all outlets. Continuously review and refine offerings to enhance the venues reputation. Financial Management: Oversee budgets across all F&B operations, managing labour, food, and beverage costs to ensure profitability. Monitor revenue performance and implement strategies to maximise sales, including upselling and promotions. Health & Safety Compliance: Ensure full compliance with all health, safety, and hygiene regulations. Maintain up-to-date documentation and conduct regular training and audits. Event Coordination: Plan and manage special dining events, group bookings, and seasonal offerings. Collaborate with the sales and marketing team to promote F&B initiatives locally and beyond. What Were Looking For Experience: Proven experience as an F&B Manager within a 4-star hotel or similarly high-volume operation. Strong knowledge of whisky, cocktails, and both fine dining and casual dining environments. Leadership Skills: A hands-on leader capable of inspiring and developing a diverse team. Strong interpersonal and communication skills. Operational Expertise: Solid understanding of F&B operations, including cost control, stock management, and financial reporting. Excellent organisational skills and attention to detail. Attributes: Passionate about hospitality and delivering outstanding guest experiences.
