    Amma & Atta | London | 3–6 Month Pop-Up Amma & Atta is a modern food, drinks brand inspired by Ayurvedic wisdom, with food influenced by Indian culinary traditions. We are looking for an experienced, hands-on Head Chef to lead the kitchen operation for our first 3–6 month pop-up at Market Halls Canary Wharf.This is a practical, operational role. You will lead food production at our off-site production kitchen and ensure consistent execution, finishing and assembly at our Canary Wharf site. Key Responsibilities • Lead day-to-day kitchen production and preparation, • Manage and organise the off-site production kitchen, • Ensure all dishes are produced consistently to Amma & Atta recipes and specifications, • Plan batch production, prep levels and daily requirements, • Oversee portioning, labelling, storage and transportation to the pop-up, • Ensure smooth on-site reheating, finishing and assembly during service, • Lead and train Prep Chefs and kitchen team members, • Maintain excellent food safety, hygiene and allergen standards, • Manage stock levels, ordering, deliveries and waste, • Support rota planning and efficient deployment of the kitchen team, • Maintain kitchen cleaning and opening/closing procedures, • Work closely with the founder during the launch and throughout the pop-up, • Help establish practical kitchen systems that can be replicated as the business grows Essential Experience • Strong professional kitchen experience, ideally including Indian cuisine or formal training in Indian cooking techniques, • Confident working with Indian paratha, chaat, dal, paneer, achaar, spice blends and batch cooking, • Strong understanding of flavour balance, spice tempering, seasoning and consistency, • Experience leading or supervising a kitchen team, • Ability to execute defined recipes, kitchen manuals and preparation standards precisely, • Experience planning production and preparing food at volume, • Strong understanding of food safety, hygiene and allergen management, • Comfortable managing stock, ordering, wastage and kitchen organisation, • Able to work cleanly, calmly and efficiently in a fast-paced environment, • Willing to learn and work within the Amma & Atta menu, systems and Ayurvedic-inspired approach to food Highly Desirable • Experience in high-volume, premium fast casual, QSR or daytime hospitality, • Experience preparing paratha or other Indian flatbreads at volume, • Experience with fresh, ingredient-led food, • Experience supporting restaurant, food hall or kitchen openings, • Experience implementing new menus and kitchen systems, • Interest in Ayurveda and its traditional approach to food and everyday wellbeing Contract & Salary 3–6 month fixed-term contract Salary: £35,000 p.a. pro rata, depending on experience The role will be approximately 45 hours per week across 5 days, with weekend availability required as part of the rota.The pop-up operates seven days a week, approximately 7.30am–5pm. Location Market Halls Canary Wharf, London, together with an off-site production kitchen.
