Sous Chef Award-Winning Independent Restaurant Niche Restaurant | Angel, London £38,000£40,000 per annum, depending on experience Full-time | Permanent | 45 hours per week A proper Sous Chef role in a restaurant where food matters Niche is an award-winning independent restaurant in Angel, London, moments from Sadlers Wells Theatre. For more than 13 years, we have built a reputation for great food, warm hospitality and doing things differently. We were Londons first 100% gluten-free restaurant and have become one of the UKs best-known destinations for guests with coeliac disease and food allergies but first and foremost, we are a restaurant, and the food has to be excellent. Our kitchen works with fresh ingredients and produces almost everything from scratch. Our menu is entirely gluten-free, tree nut-free, peanut-free and sesame-free, with dairy-free, vegan and low-FODMAP dishes alongside our core menu. We are now looking for an experienced, professionally trained and ambitious Sous Chef to work alongside our Head Chef and play a key role in the next stage of Niche. The role This is a hands-on leadership position. Youll work closely with the Head Chef to run the kitchen, lead services and maintain consistently high standards of food, presentation, organisation and cleanliness. When the Head Chef isnt there, youll be confident taking charge. Your responsibilities will include: Leading and organising busy lunch and dinner services Ensuring dishes leave the kitchen consistently and to specification Managing mise en place, prep and daily kitchen organisation Supporting, training and developing junior chefs Maintaining excellent standards of food hygiene and allergen control Assisting with ordering, stock control, GP, food cost and waste Checking deliveries, storage, labelling and rotation Helping develop and improve dishes and seasonal menus Maintaining high standards of presentation and attention to detail Working closely with the Head Chef and restaurant management team Niche is a relatively small restaurant with a busy kitchen. There is nowhere to hide and no unnecessary hierarchy everyone contributes, everyone takes responsibility and senior chefs lead from the front. The chef were looking for You may already be an experienced Sous Chef, or you may be a strong Junior Sous Chef who is ready for the next step. You should have a solid background in quality, fresh-food kitchens and be comfortable working in an environment where consistency, organisation and attention to detail really matter. Professional culinary training is essential for this role. Applicants should hold NVQ Level 1 and Level 2 in Professional Cookery, or recognised equivalent professional cookery qualifications . We will also consider chefs who completed a recognised professional chef apprenticeship or equivalent formal culinary training . We believe professional training provides chefs with important foundations in cookery techniques, food preparation, kitchen organisation, hygiene and food safety. Experience then builds upon those foundations. For a Sous Chef position, we are therefore looking for both professional training and substantial practical kitchen experience . Were looking for someone who: Is a professionally trained and qualified chef Has strong professional cooking skills and sound culinary knowledge Has substantial experience in quality restaurants cooking from fresh ingredients Has experience at Sous Chef or Junior Sous Chef level Is confident leading a busy service Has high standards of presentation and consistency Understands food cost, portion control, stock management and waste Has excellent food hygiene standards Can organise themselves and others effectively Communicates clearly and treats colleagues with respect Can train and develop less experienced chefs Remains calm and organised under pressure Takes responsibility rather than waiting to be told what to do Is curious about food and wants to continue learning Qualifications, experience, ability and attitude all matter to us. We are looking for someone with the professional foundations as well as the practical experience to be a credible senior member of our kitchen team. You don't need to be a gluten-free chef Previous experience of specialist gluten-free or allergen-safe cooking is not required . We will train you. What we do require is the discipline to follow our systems precisely. Many of our guests have coeliac disease or serious food allergies and choose Niche because they trust us. That means allergen control is taken extremely seriously throughout the business. Every member of our kitchen team receives specialist training in our procedures, ingredients and controls. We don't see this as restricting what chefs can cook. Quite the opposite: producing genuinely great food within these parameters makes you a better and more knowledgeable chef.
