SOUS CHEF New opening — premium restaurant, Hampton Court KT89ER We're a hospitality group that has been running restaurants in this area for 20 years. We currently have four sites, and at the end of October we're opening our fifth: a premium Italian restaurant near Hampton Court, seating around 70. The food is proper Italian cooking with a modern hand: good ingredients, treated properly, served well. The standards are high and we won't pretend otherwise. You'll be in from the soft opening, setting the place up with us. THE ROLE You're the Head Chef's second, and when the Head Chef isn't in, the kitchen is yours. Not caretaking it — running it, with full responsibility for the food that leaves the pass and for the team that puts it there. This is a new kitchen, opening from scratch, in a group that has further openings planned. If you're looking for the last step before Head Chef, this is it. WHAT WE'RE LOOKING FOR — Proven experience in Italian kitchens — Able to take full charge of the kitchen when the Head Chef isn't in — Able to lead a brigade and hold the standard under pressure — Confident with ordering, stock, food cost and rotas — Good English — you'll need to understand, be understood, and write clearly — Someone who works well in a team, not around it — Available full time, shifts across all seven days — The right to live and work in the UK These are requirements, not a wish list.
