Role Purpose To prepare, cook and present high-quality food for the Clubs Dining Room and associated member dining services. The Chef de Partie will take responsibility for an allocated section, deliver consistent la carte dishes and daily specials, and work closely with senior chefs and front-of-house colleagues to provide timely, polished and member-focused service in keeping with the standards of a prestigious private members club. Key Relationships Executive Chef & Head of Food and Beverage Head Chef, Senior Sous Chef and Sous Chef Kitchen team Dining Room, Bar and Clubhouse teams Key Responsibilities Production & Service Prepare, cook and present dishes in accordance with the Dining Room menu, bar menu, daily specials, recipes, portion standards and plating guides. Take full ownership of an allocated section, completing mise en place accurately and ensuring readiness before every service. Deliver consistent la carte service across lunch and dinner, maintaining quality and presentation during both quiet and peak periods. Respond calmly to changes in covers, member requests and dietary requirements, escalating material issues to the senior chef. Support other sections when required to maintain the pace, quality and flow of Dining Room service. Service Planning, Communication & Handover Review reservations, expected covers, menu availability, specials and dietary information before each service. Attend pre-service briefings and maintain clear, concise communication with senior chefs and Dining Room colleagues throughout service. Communicate shortages, substitutions, allergens, delays and menu changes promptly so that members receive accurate information. Complete clear section handovers, leaving mise en place, stock and equipment organised for the next service. Quality, Stock & Waste Maintain the Clubs standards for taste, consistency, presentation and portion control. Use ingredients responsibly and support accurate ordering, stock rotation, yield control and waste reduction. Receive and store deliveries correctly and follow authorised supplier and back-door procedures. Care for kitchen equipment and leave the section clean, organised and ready for the next shift. Food Safety, Allergens & Compliance Follow HACCP, food-hygiene, allergen, health-and-safety and personal-hygiene requirements at all times. Maintain accurate food production, temperature, traceability and supplier records within Food Alert or the Clubs required systems. Identify and communicate dietary and allergen risks, preventing cross-contamination and following approved procedures. Wear the required uniform and personal protective equipment and report hazards immediately. Teamwork & Development Support Commis Chefs and junior colleagues with clear instruction, practical coaching and a positive example. Demonstrate reliable attendance, punctuality, professional presentation and respectful communication. Work constructively across the Kitchen, Dining Room, Bar and wider Clubhouse teams, recognising the importance of discreet and personalised member service. Contribute ideas for seasonal dishes, daily specials and improvements to quality, consistency and member satisfaction. Attend required statutory and departmental training and act on constructive feedback. Carry out other reasonable duties appropriate to the role. Person Specification Essential Experience Experience as a Chef de Partie or strong Demi Chef de Partie in a private members club, quality restaurant, luxury hotel or comparable la carte operation. Experience taking responsibility for a kitchen section and delivering consistent dishes to order during busy lunch and dinner services. Sound practical knowledge of food hygiene, HACCP and allergen controls. Experience of mise en place planning, portion control, stock rotation, daily specials and waste awareness. Skills & Attributes Passionate about food and proud of precise, consistent work. Well organised, adaptable and able to prioritise under la carte service pressure. Flexible to work the Clubs lunch and dinner service pattern, including evenings and weekends as required. Preferred Experience Recognised professional cookery qualification. Level 2 or Level 3 Food Safety and current allergen training. Experience with Food Alert or a comparable digital food-safety system.
