ADDITIONAL OPPORTUNITY: SOUS CHEF (Second in Command) We are also recruiting a highly skilled and dedicated Sous Chef to work directly alongside our Head Chef. This role is perfect for a talented chef ready to support kitchen management and operation while specializing in traditional Mexican cooking. SOUS CHEF QUALIFICATIONS: • Culinary Expertise: Strong, demonstrable experience (3+ years) in a busy kitchen environment with specific expertise in preparing regional Mexican dishes and ingredients., • Operational Support: Ability to manage daily service, supervise junior chefs, and maintain order on the line in the Head Chef's absence., • Cost Control: Proven track record of managing inventory, minimizing waste, and assisting with food ordering., • Discipline: Commitment to maintaining the highest standards of food quality, presentation, and hygiene. WHO WE ARE SEEKING (For Head Chef Role) The ideal Head Chef candidate must be a genuine artisan and a proven leader with the following qualifications: • Custodianship of Tradition: Deep, demonstrable expertise in traditional, regional Mexican and Latin cooking methods and flavour profiles., • Proven Leadership: A minimum of 5 years' experience as a Head Chef or Executive Sous Chef., • Startup Expertise: Proven experience successfully opening a new restaurant, including kitchen setup, menu development, and team training., • Management Skills: Exceptional ability to manage kitchen operations, control food and labour costs, and maintain stringent health and safety standards., • The Visionary: A true passion for innovation within the framework of authenticity, inspiring a team to deliver excellence every single service.
