    Sous Chef – The Perry Hill Pub, Catford £15–£17 per hour + tronc Full-time / Permanent The Perry Hill is a busy independent pub in Catford, South East London, serving fresh, seasonal pub food alongside a strong events and functions business. We’re looking for an experienced Sous Chef to join our kitchen team and support the Head Chef in the day-to-day running of the kitchen. This would suit someone who enjoys cooking with fresh ingredients, is confident leading a busy service, and wants to be part of a friendly, independent pub. The role You’ll work closely with the Head Chef across regular pub services, busy weekends, Sunday roasts, functions and events. You’ll help keep the kitchen organised, support the team and take charge when the Head Chef is away. Typical responsibilities will include: • Preparing and cooking dishes from fresh ingredients, • Leading services and maintaining consistently high standards of food quality and presentation, • Supporting and developing junior members of the kitchen team, • Planning prep for regular services, functions and larger events, • Helping with ordering, stock control and rotation, • Managing portions and reducing food waste, • Maintaining food safety, allergen and hygiene standards, • Contributing ideas for seasonal dishes and specials, • Working closely with the front-of-house team to keep services running smoothly What we’re looking for Ideally, you’ll have previous experience as a Sous Chef or be a strong Senior Chef de Partie ready to take the next step in a fresh-food pub, restaurant or similar kitchen.     The Role We’re looking for a Front of House Manager — someone who can own the floor, lead a team, and make sure every guest gets the Sweet Jerk experience from the moment they walk through the door. If you’ve managed in fast-paced brands like Nando’s, Wagamama, PizzaExpress, Five Guys, Wingstop or similar, this will feel familiar. This is not a Supervisor or Senior Waiter/Waitress role. We’re looking for someone who has already managed a restaurant Front of House operation and knows what it takes to run a busy service, lead a team, hold standards, cash up, handle customers, and keep everything moving when the pressure is on. You’ll work closely with the Restaurant Manager and Kitchen Manager to make sure FOH is sharp, organised and bringing the energy every service. Key Responsibilities Lead the Front of House team during service, keeping the floor organised, efficient, and guest-focused. Manage service flow across seating, ordering, food running, drinks, clearing, and customer experience. Lead and motivate the FOH team, setting the standard through your own energy and performance. Handle customer concerns and service recovery confidently and professionally. Carry out opening and closing procedures, including cashing up and end-of-day till reconciliation. Train, onboard, and develop new FOH team members. Support rota planning, shift allocation, and appropriate staffing levels. Maintain high standards of cleanliness, presentation, and restaurant readiness. Ensure company procedures, health and safety requirements, and operational checks are followed. Monitor team performance and address issues quickly when standards slip. Work closely with the kitchen team to keep communication tight and service flowing. Step in wherever needed during busy periods — at Sweet Jerk, our managers lead from the floor. What We’re Looking For ✅ At least 2 years’ experience as a Restaurant Manager or Front of House Manager. ✅ Proven experience directly managing a FOH team of 5+ people. ✅ Experience running busy restaurant services as the manager responsible for the floor. ✅ Confident with cashing up, till reconciliation, opening and closing procedures. ✅ Experience managing rotas, staffing, training, and team performance. ✅ Strong customer service skills and confidence handling complaints and service recovery. ✅ Experience within a recognised restaurant group, hospitality brand, or busy standards-led restaurant environment is highly desirable. ✅ Calm, organised, and decisive when service gets busy. ✅ Someone who leads by example — on the floor, not from the sidelines. ✅ High standards, great energy, and a genuinely warm approach to hospitality. ✅ Flexible availability including evenings and weekends. Please note: This is a management position. Supervisor, Shift Leader, Team Leader, Senior Server or Senior Waiter/Waitress experience alone will not meet the experience requirement unless you have also held overall Front of House or Restaurant Manager responsibility.
