Making sure all necessary preparation is done for your section. Supporting head chef and sous chef in day to day tasks. Ensure that kitchen operates in timely way that meets our quality standards. Ensure that all food is prepared and presented to specification. Be aware of and comply with dietary requirements, allergies, and intolerances of customers. WHO ARE WE? We distil our own small batch gin at each site and offer gin blending & cocktail masterclasses too. Hours: Full time position 48h per week and part time 20h per week Salary: up to £15ph

J O B P R O F I L E D E S C R I P T I O N : To provide guests with an exceptional experience through the provision of seamless and warm service in the restaurant and bar areas. The Bartender is ultimately responsible for the entire guest experience in the bar and lounge as well as the beverage production, quality, and dispensing of all drinks going to the bar, lounge, and restaurant. The Bartender will have the support of a Barback in order to achieve this. From ordering to recommendations, service detailing and situation handling, the Bartender will, as well, have the support of the Head Bartender, Assistant Bar Manager and Bar Manager at their disposal in order to deliver an optimum guest experience. DAILY R E S P O N S I B I L I T I E S o Take responsibility for maintaining high quality standard required o Assure all drinks are prepared and served according to GAIA standards o Always ensure that mise-en-place is completed correctly, both prior and after shift o Serve driks according to the recipes while maintaining a clean and saniraty bar area o Check the stock and update management in case of missing items or any changes o Learn about menu itemes and memorizing cocktail recipes, food dishes and wines by the glass o Attend the training o Assist with delivies if needed o Contribute to seasonal menu in collaboration with the Head Bartender

R E S P O N S I B I L I T I E S o To supply the highest level of customer care and service whether in the public eye or in the back areas. o Prepare, cook, and serve any food delegated as your responsibility ensuring that the highest possible quality is maintained and that agreed standards for food preparation and presentation are met at all times. o To adhere to company procedures in regards to temperature checks, food labeling and dating, cleaning schedules, and hygiene regulations at all times and ensure that all records of such are updated and kept. o To assist with the acceptance and storage of deliveries and that all relevant company procedures are adhered to. o Ensure and maintain the work area clean, hygienic, and tidy state at all times. o To wear the full and correct uniform at all times whether in the public eye or back areas. o To have an understanding of menu planning, writing, and the implementation of stock controls and how this enables the kitchen to meet Gross Profit %. o To be familiar with the opening and closing procedures of the kitchen and carry them out as rotated. o To assist and ensure the junior chefs carry out daily and weekly procedures including temperature checks, food labeling/dating, and storage and to ensure records of such are up to date. o Ensure that temperature checks are carried out a minimum of 5 times per day and recorded. o To recognize the importance of good stock management/control and its importance in the kitchen meeting its Gross Profit %. o To remove any hazards and make safe any defects in the kitchen or equipment and report any problems to the Senior Chef on duty.

The headwaiter is responsible for the overall guest’s experience and wellbeing, overlooking and supporting the Waiter/ Waitress in his/ her duties. The main responsibility of the headwaiter is the order taking and calling away the tables to ensure a good tempo within the section and return the tables on time. SERVICE R E S P O N S I B I L I T I E S: o Assist the hostess/ host to seat the customers o Great the guests and take the drinks order if the waiter is busy with another table o Place the drinks order with position numbers o If the waiter is busy with another table serve the drinks o Explain the menu and specials if any o Check with the waiter if any information was given to him by the guest before approaching the table for the order o Take the food order (check for allergies or intolerance) o Place the order on Micros . o Check the mise en place and make sure enough space has been made for the food in the middle of the table o Assist the Waiter/ Waitress serving the food at the table o Call the hot starters away o When a table is having cold and hot starters always refresh the plates between the course o Once the starters finished call the mains away and clear the table with the CDR and make sure the mise en place is correct for the mains NB: ALWAYS CALL A TABLE AWAY BEFORE CLEARING IT o After the mains make sure the table is cleared, crumbed and table cloth replaced before the dessert menus are being handed o Make sure the dessert and coffee order has been placed by the waiter o Once the coffees and desserts order check the bill on micros and add the BILL CHECKED item this way everyone knows the bill is ok to be dropped, check with the sommelier in case the WINE CHECK hasn’t been done.
