The Bakery Assistant General Manager serves as a critical operational leader within the bakery, helping ensure every product reflects Tatte’s commitment to craft, consistency, and excellence. The Bakery AGM is the operational second-in-command to the Bakery General Manager and plays a hands-on leadership role in daily production execution, team leadership, food safety, and operational performance. This role oversees production supervisors and bakery teams across multiple departments, ensuring production goals, quality standards, staffing plans, and operational priorities are executed effectively and consistently. The Bakery AGM helps translate strategy into execution, balancing people leadership, operational discipline, and continuous improvement to support a high-performing, scalable bakery operation. This leader is deeply engaged on the floor, coaching teams, solving operational challenges, and reinforcing a culture of accountability, collaboration, and craftsmanship. KEY RESPONSIBILITIES Lead Daily Bakery Operations • Oversee day-to-day production operations across bakery departments to ensure timely, accurate, and efficient execution of production plans, • Lead and coordinate production supervisors and shift leaders across multiple production areas, • Ensure production targets, labor plans, and operational priorities are achieved while maintaining product quality and consistency, • Serve as the operational leader in the absence of the Bakery GM, • Monitor workflow, staffing levels, and production schedules to proactively address operational bottlenecks or capacity constraints, • Uphold Tatte's uncompromising standards for product quality, freshness, presentation, and consistency, • Ensure all bakery operations adhere to DOT, GMP, HACCP, OSHA, FDA, and local health and safety regulations, • Conduct routine production, sanitation, and quality audits to reinforce standards and identify improvement opportunities, • Partner with production leaders to troubleshoot quality issues and implement sustainable corrective actions, • Lead, coach, and develop production supervisors and bakery team members through consistent feedback, accountability, and support, • Foster a culture of learning, teamwork, craftsmanship, and continuous improvement, • Support hiring, onboarding, training, and cross-training efforts in partnership with the People Team and Bakery GM, • Help identify high-potential talent and support internal development pathways across bakery operations, • Monitor labor utilization, waste, production efficiency, and operational KPIs to support bakery performance goals, • Partner with the Bakery GM on labor planning, staffing optimization, and operational improvement initiatives, • Identify opportunities to improve throughput, workflow, communication, and operational consistency, • Support implementation of Lean, continuous improvement, and operational excellence initiatives, • Maintain a strong floor presence and actively support teams during peak production periods, • Help coordinate production readiness for new product launches, seasonal volume increases, and market expansion, • Respond calmly and effectively to operational challenges, staffing issues, and production disruptions Required • 4-7 years of leadership experience in bakery production, food manufacturing, or high-volume culinary operations, • Proven experience leading teams in fast-paced production environments, • Strong operational leadership skills with the ability to balance quality, efficiency, and people development, • Working knowledge of food safety, sanitation, OSHA, and GMP standards, • Experience with production scheduling, labor management, and operational planning, • Strong communication, coaching, and problem-solving skills, • Ability to lead with urgency, accountability, and empathy, • Experience in bakery, pastry, or artisan food production strongly preferred, • Ability to stand for extended periods of time and lift up to 50 lbs, • Flexibility to work varied schedules including early mornings, nights, weekends, and holidays as business needs require, • Must be comfortable working in a fast-paced production environment with varying temperatures and production conditions, • Competitive pay - ranging from $95K-125K/year (depending on experience) and bonus potential of up to 10%, • 401(k) (with a vesting match), • Free employee assistance programs, • Paid vacation time and paid sick time, • Health, dental and vision insurance, • Generously discounted meals and free drinks
