Must have experience as a Team Leader of pubs, bars or restaurants. Demonstrable understanding of P&L's Applied knowledge of stock, marking and GP% Smart Rota'ing - right people right time People management Be able to recruit, train and retain a great team. Kitchen management from stock ordering and stock audit to day-to-day due diligence Late night focus must be able to work when the business is busiest. This role functions in a business that operates evenings and weekends, and as such full flexibility is required.
