Ejecución y seguimiento:Comunicar al personal de cocina los objetivos departamentales establecidos, así como repasar los procesos críticos y puestas en escena del área mediante la realización de mini reuniones diarias, de acuerdo con los estándares establecidos por el hotel. Elaborar los cuadrantes de turnos y vacaciones del personal de cocina, de acuerdo con las previsiones de ocupación y la herramienta de dimensionamiento de plantilla. Colaborar en la realización de pedidos diarios a los proveedores y supervisar que la mercancía que se recibe sea la correcta en cantidad y calidad. Llevar a cabo el seguimiento y cumplimiento del Manual de Banquetes. Formación y mejora: Atender y resolver posibles reclamaciones y/o sugerencias recibidas por parte de clientes. Proponer mejoras en los procedimientos llevados a cabo en el Departamento. Control y calidad: Controlar y gestionar procesos internos de administración de personal de su equipo, en colaboración con el Departamento de Recursos Humanos. Ejecutar y controlar el inventario: llevar a cabo la compra de la mercancía y analizar el consumo de los alimentos para que no se produzca merma. Colaborar en la realización del control de stock de almacén, asegurando un sistema FIFO, en el que se garantice el uso de los alimentos que caduquen en las fechas más próximas. Realizar el control de gastos de los eventos, escandallos, fichas técnicas y creación de oferta gastronómica, libro de recetas, alérgenos, etc. Controlar y supervisar el uso de la maquinaria del Departamento, así como el mantenimiento de las mismas, notificando las posibles incidencias. Cumplir y hacer cumplir las normas de calidad, seguridad y salud, medioambiente y protección de datos, establecidos por la organización. Participación estratégica: Seleccionar, evaluar y colaborar en la formación y capacitación de los miembros del equipo de Cocina, de acuerdo con la metodología establecida por la Dirección de Recursos Humanos, así como atender el proceso de incorporación/Onboarding.
