We are a very small family run Italian restaurant based near to Liverpool Street Station. We are looking for a full time chef, working in a very small team of just two chefs. Together you will be responsible for everything in the kitchen from food preparation, deliveries, orders, hygiene, cooking all dishes in service, cleaning of kitchen including pots and pans and deep cleaning of the kitchen once a week. We are open for lunch and dinner service Monday to Fridays. You will be required to work Monday to Fridays from 10.30am to about 3/3.30pm and then again from 6pm until about 10/10.30pm. You will have weekends off and Bank Holidays as well as 2 weeks holiday over Christmas and New Year as well as 2 weeks in August when the restaurant is closed. We are looking for someone who is experienced and can work in an open kitchen with customers sitting around the counter watching you work. You need to therefore be clean, hygienic and work in a professional manner. You need to also be able to work calmly under pressure as well as work with quick based energy and enthusiasm. You will need to be a quick learner and we will teach you all our menu dishes (which change frequently) and how we work. Summary: We are seeking a diligent and organised Prep Chef to join our team at our open kitchen. The Prep Chef will play a crucial role in ensuring the kitchen is fully prepared for service each day by efficiently completing the prep list. This role requires attention to detail, culinary skills, and the ability to work effectively in a fast-paced environment. Responsibilities: 1. Review daily prep list and prioritize tasks accordingly. 2. Prepare ingredients such as vegetables, meats, and other food items according to recipes and portion sizes. 3. Organize and maintain a clean and orderly kitchen workspace, including storage areas and equipment. 4. Assist in receiving and storing deliveries of food and supplies. 5. Work collaboratively with other kitchen staff to ensure efficient workflow and timely service. 6. Follow proper food safety and sanitation guidelines at all times. 7. Monitor inventory levels and report any shortages or discrepancies to the kitchen manager. 8. Assist in the setup and breakdown of the kitchen before and after service. 9. Communicate effectively with kitchen team members and management regarding any issues or concerns. Requirements: 1. Previous experience working in a kitchen environment, preferably as a prep cook or similar role. 2. Basic knowledge of food preparation techniques and culinary principles. 3. Ability to work efficiently and multitask in a fast-paced environment. 4. Strong attention to detail and organizational skills. 5. Excellent communication and teamwork abilities. 6. Flexibility to work Monday through Friday from 9:00 AM to 4:00 PM. 7. Food handler's certification or willingness to obtain one. •Maintain a high level of personal hygiene • Interested and knowledgeable in all Pizza-making process • Collaborate with colleagues on cutting, slicing and cooking all ingredients needed for all selection of pizza • Keep a good standard of hygiene in all section including all different pizza oven and machinery • Tidy storage in both walk in fridges to be maintain at all time with a good rotation of ingredients • Maintain Luci quality and standards following all par levels avoiding waste of dough and ingredients • Follow all the assignments received from Head pizzaiolo • Keeping all ovens always at right temperature to achieve the same quality of pizza • Check constantly the proof process of the dough, avoiding overproof and then wastages • Collaborate with FOH staff and kitchen’s chefs to manage a good service and a counter always filled with fresh baked pizza up to Luci standard
