London's highest piano lounge | 53rd floor, Wardian, Canary Wharf E14 Full-time | Tips and service charge | Immediate start Some bars have a view. This one has all of them 🌇🍸💫 Fifty-three floors up, the windows wrap the whole way round. Canary Wharf on one side, Greenwich on the other, and the full London skyline laid out in between. On the right evening the cloud sits below the glass and the room feels genuinely untethered from the city underneath it. That is where you'd be making drinks. The Observatory is London's highest piano & cocktail lounge. Live piano, a proper cocktail list, and a food menu built to be eaten slowly with friends. We opened just over a year ago and have spent that time turning it into something people are quietly protective of. We're now looking for a Bar Manager to take charge of the bar and carry that on. 🎹 THE VENUE The Observatory sits at the top of Wardian, exclusively for the residents of the two towers below it. Around 2,000 people have access, and a good number of them are in every week. That changes the job completely. You're not turning over strangers. You're building a room of regulars who know your name and expect you to know theirs, and who will tell you honestly what they think of the new menu. It has the warmth of a members' club without any of the stiffness. The bar itself is the centerpiece of the venue and deliberately so. That means the Bar Manager here spends most of their time exactly where they should be: behind the bar, making drinks, talking to guests, with an eye across the whole venue. This is not a role that disappears into an office. Live piano is weekly and our signature 'Piano Plates' are a tapas-style sharing menu designed to be picked at across a long evening with a cocktail in the other hand. Food runs seven days. 🥃 YOUR CRAFT, VALUED If you care about what goes in the glass, you'll be somewhere it counts. We want someone with genuine opinions about dilution, about garnish, about the difference between a drink that's technically correct and one that's actually good. You'll have real input into the list, work directly with suppliers, and build seasonal serves that sit properly alongside the food and the piano. The room gives you permission to be ambitious. Guests come here for an occasion, they're not in a rush, and they'll try what you recommend. That's a rare thing and it's wasted on someone who just wants to pour. 🚀 THE ROLE You'll run the bar. Standards, stock, ordering, prep, consistency. The cocktail quality is yours to own and yours to push. You'll lead a small team. A handful of people, hands-on, side by side. You'll set the standard by working to it rather than talking about it, and train the team properly as they come through. You'll host. Learning names, remembering orders, reading the room. The best nights here are the ones where the manager is visibly enjoying themselves. You'll support events. The Observatory hosts a steady calendar of private hires, birthdays, engagements, weddings and seasonal parties. To be clear: our events team handles the planning and the logistics. Your part is the drinks, the bar and the delivery on the night, plus being the familiar face residents come to first. Events experience is a bonus, not a barrier - if you've got the bartending and the hosting, we'll bring you up to speed on the rest. You'll help shape what's next. Menus, promotions, ideas for the room. We're a year in and still building. You'd be joining early enough for your fingerprints to be on it. --- 💥 WHAT WE OFFER • Sociable hours. We open at 4pm on weekdays, midday at weekends. No breakfast shifts, no split shifts, no 3am finishes., • Tips and service charge, • Real ownership of a venue with a genuine identity, not a site on a spreadsheet, • Input that goes somewhere. Menu development, supplier tastings, seasonal launches, • Room to progress. We're a growing London group - Beringers, Lockdown, Supershakes, The Eleventh Hour - and we promote from within wherever we can, • Staff food and drinks on shift, plus discounts across every venue, • The backing of an experienced events and senior management team, • Immediate start available 🔥 WHO WE'RE LOOKING FOR • Strong bartending behind you, ideally with time in a senior or management role, • Real cocktail knowledge and the consistency to deliver it on a full Saturday, • Comfortable leading a small team by example, • A natural host. Warm, present, genuinely interested in people, • Organised enough to run the operational side without being asked twice, • Calm through a busy service and a full events diary, • Someone who notices the detail, because our regulars absolutely do You don't need years of events management. You don't need a group background. If you're an excellent bartender who wants to run a room and look after people properly, that's the person we're looking for. ⚡ ONE MORE THING We'd like this to be a long stay. Everything good about this job compounds. The regulars, the reputation of the room, the events diary, the list you build. A year in, it's a genuinely different job to the one you start. That only pays off for someone who wants to stay and build it, and we'd rather be honest about that now than six months in. If you're looking for the next step rather than the next stopgap, this is one of the best rooms in London to take it in. 👋 HOW TO APPLY Hit apply, and tell us one drink you'd put on our list. That's the whole application. One drink, one line on why. We read every one and reply to everyone. If it looks like a fit, we'll set up a quick video chat, then get you in to see the place, meet the team and take in the view - followed by a paid trial shift so you can decide for yourself. The 53rd floor is very difficult to describe and very easy to show you.

53rd Floor Sky Lounge, Wardian, Canary Wharf E14 Full-time | Tips & Service Charge | Immediate start 🌆 Most bars have a view or a community. The Observatory has both - 53 floors above London. The Observatory is a Sky Bar & Restaurant on the 53rd floor of Wardian, looking out over Canary Wharf and the whole of London. It's one of the highest bars in the city - and it's exclusively for the developments residents & their guests. That last part is what makes this job different from every other bar manager role you'll scroll past today (well maybe the views as well). You're not serving a queue of strangers. You're looking after a community of around 1,500 residents & their guests who treat this as their local, their living room and their party venue. Regulars come in weekly. You'll know their names, their drinks and their birthdays. It has the feel of a private members' club, without the stiffness. We're looking for someone to take real ownership of it. 🚀 THE ROLE You'll run The Observatory day to day - leading the team, keeping cocktail and service standards high, and being the face residents come to. Alongside that, the venue hosts a busy year-round events calendar: birthdays, engagements, weddings, seasonal parties and private hires, plus the events we programme ourselves. To be clear about the events side: you're the host, not the event planner. Our dedicated events team handles the logistics, the planning and the bigger productions. Your part is being the person residents talk to, helping shape the drinks and the feel of the night, and delivering it brilliantly on the day. If you've worked functions or private hires before, you'll be right at home. If you're a superb bartender who's keen to grow into that side, we'll teach you. Day to day you'll: • Lead from the front behind the bar, delivering excellent cocktails and genuine hospitality, • Take ownership of the running of the venue - standards, stock, ordering, prep and organisation, • Build real relationships with residents and be their first point of contact for bookings, • Look after resident celebrations and private hires from enquiry through to the night itself, • Lead, train and develop the team, • Work with our events team on the larger bookings and the annual events calendar, • Grow the events side of the venue and get residents using the space more, • Work with senior management on menus, promotions and where The Observatory goes next 💥 WHAT YOU'LL GET • Tips and service charge on top of your salary, • ⏰ Sociable hours. We open at 4pm on weekdays and midday at weekends. No breakfast shifts, no 3am finishes, no split shifts., • Genuine ownership of a unique venue rather than one site among many, • 📈 Room to grow. We're a multi-site London group - Supershakes, Beringers, Lockdown, The Eleventh Hour - and we'd far rather promote from within than recruit in., • Involvement in menu development, supplier tastings and the events programme, • Staff food and drinks on shift, plus discounts across all our venues, • Support from an experienced events and senior hospitality team, • A team that actually enjoys working together, • days holiday 🔥 WHAT WE'RE LOOKING FOR • Solid bartending experience, ideally with time in a management or senior role, • Strong cocktail knowledge and consistency under pressure, • Some experience of events, functions or private hires - or real appetite to learn it, • A natural host who genuinely likes people and remembers them, • Organised, proactive and comfortable owning a space, • Calm and confident through a busy service, • Someone who cares about the details, because our regulars notice them And honestly: we're looking for someone who wants to stay. Building a relationship with a community of regulars takes time, and it's the best part of this job - but only if you're here long enough to enjoy it. If you're looking for somewhere to settle, put your stamp on and grow with, this is it. ⚡ WHY THIS ONE There aren't many jobs like this in London. One shift you're making cocktails for a couple who come in every Friday. The next you're helping them plan their engagement party, 53 floors above the city. If that sounds like the kind of place you'd like to run, we'd love to meet you. Apply now and let's have a chat 👋

The right person will help run the kitchen during our in-house food programme while also working closely alongside a rotating line-up of chefs and collaborators during residencies and events. This is an exciting opportunity to be part of opening a new concept from the ground up while learning from different personalities, styles and approaches across the industry. The role will work in close partnership with our Group Head Chef to shape and execute the food offering outside of collaborations, while helping maintain consistency, standards and operational excellence across a constantly evolving programme. This role will be central to the identity and rhythm of the space. We are looking for someone who is organised, ambitious, adaptable and genuinely excited by food, hospitality and creative collaboration. About the space The venue is an intimate, industrial kitchen and bar in Mare Street, with a large open kitchen and counter seating at its heart. It is designed as a platform for rotating chefs, drinks-led experiences and social hospitality. The space is curated and operated by us. While the concepts may change, the guest experience, standards and overall feel of the venue remain consistent. The Sous Chef will play a key role in protecting those standards while helping the kitchen remain flexible, creative and well executed. What you’ll be responsible for Kitchen operations and service • Support the day-to-day running of the kitchen and lead services when required, • Work closely with the Group Head Chef to deliver the venue’s core food programme outside of collaborations and residencies, • Take ownership of kitchen organisation, prep systems, cleanliness and service flow, • Help ensure consistency, quality and strong execution across changing menus and concepts, • Support the setup and operational execution of guest chef residencies, takeovers and collaborative events, • Maintain calm and effective communication during busy services and fast-paced event nights Collaborations and events • Work alongside visiting chefs and collaborators during residencies and events, • Help support transitions between different kitchen concepts, menus and styles of service, • Assist with kitchen setup, prep coordination and operational readiness for events and takeovers, • Help ensure collaborators are supported operationally while maintaining the standards of the venue, • Contribute ideas and feedback to improve the overall guest and kitchen experience across the programme Team leadership and development • Support and mentor junior kitchen team members, • Help coach and develop a positive, accountable and professional kitchen culture, • Lead by example during prep and service with strong standards and attention to detail, • Support training and onboarding as the team grows Health, safety and compliance • Take ownership of kitchen health and safety standards, • Ensure the kitchen consistently operates in line with food safety and hygiene requirements, • Maintain strong systems around cleanliness, storage, labelling and HACCP procedures, • Help monitor stock rotation, wastage and kitchen organisation to maintain efficient operations, • Identify operational risks early and proactively solve problems before they affect service What we’re looking for We are looking for someone with strong kitchen fundamentals who is excited by the idea of helping build something new and working in a constantly evolving environment. About us We’re the team behind Crudo and Tiny Wine, two independent hospitality concepts we’ve built in London over the past few years. Crudo opened in 2019 and has grown into a group of restaurants built around modern Latin American food, strong atmosphere and warm, energetic service. Tiny Wine came out of our love for smaller, more intimate drinking spaces, with a big focus on personality, curation and creating a place people genuinely want to spend time in. A big part of what we’ve learnt through both brands is that people come back for more than just the food or drinks. They come back for the feeling of the place, the team behind it, and the sense that something thoughtful is being built. Rocola Studio is the next step in that. It gives us the opportunity to create a more flexible space built around a changing programme of chefs, drinks, events and collaborations. A space that can evolve constantly, while still being run with a clear point of view and strong operational standards. We’re excited by the idea of building something that feels social, current and full of life. Somewhere guests want to return to regularly, and somewhere chefs and collaborators are genuinely excited to be part of.
