The restaurant is single-site, founder-led, and built around an authentic Sri Lankan menu fresh produce from the market on the doorstep, regional cooking techniques rarely seen at this level in London, and a published cookbook that anchors the brand. Press coverage and bookings have been strong since opening. The role You'll run the pass during service, lead section chefs, own prep standards and consistency, and step up in the Head Chef's absence. Outside service, you'll contribute to ordering, stock, kitchen rotas, and the development of new dishes alongside the Head Chef.
