    We are a passionate Italian restaurant dedicated to authentic flavors, fresh ingredients, and high-quality service. Our kitchen focuses on traditional Italian cooking with a modern touch, using seasonal produce and classic techniques. We are seeking an experienced and highly motivated professional to join our culinary team. This pivotal role involves supporting the Head Chef in all kitchen operations, overseeing staff, maintaining exceptional food quality, and contributing to the development of our Italian menu. Key Responsibilities • Assist the Head Chef in managing all kitchen operations, ensuring smooth service and efficient workflow., • Supervise, train, and mentor junior kitchen staff, including Chef de Parties, promoting a positive and productive working environment., • Oversee food preparation, cooking, and presentation, ensuring adherence to recipes, quality standards, and portion control., • Manage inventory, including ordering, stock rotation, and minimizing waste., • Contribute to menu development, creation of daily specials, and costing., • Ensure compliance with all food safety, hygiene, and HACCP standards., • Maintain cleanliness and organization of the kitchen at all times., • Take charge of kitchen operations in the Head Chef's absence, managing shifts and resolving any issues. Requirements • Proven experience as a Sous Chef or a highly skilled and experienced Senior Chef de Partie in a high-volume restaurant setting., • Extensive knowledge of Italian cuisine, cooking techniques, and ingredients., • Strong leadership, organizational, and communication skills., • Ability to manage and motivate a kitchen team effectively., • Proficiency in inventory management and cost control., • Current food hygiene certification and a thorough understanding of HACCP., • Ability to work under pressure, maintain composure, and make sound decisions in a fast-paced environment., • Flexible availability, including evenings, weekends, and holidays.     Mour is an exciting new opening (end of May 2026) in Marylebone, offering a refined Mediterranean-inspired dining experience in a 60-cover restaurant, including 20-cover courtyard. We are on the lookout for a talented and driven Sous Chef to join the opening team. This is an exciting opportunity to be part of a project focused on delivering refined, and seasonal food with a strong emphasis on consistency, quality, and execution. The restaurant is also part of The Leonard Hotel and the kitchen will operate across multiple outlets, including restaurant service, breakfast, and in-room dining, with a clear ambition to build a respected and successful operation. The Role Working closely with the Head Chef and FOH, you will play a key role in the day-to-day running of the kitchen. As hands on Sous chef you’ll help set and maintain standards, support the team, and ensure a smooth and consistent service across all areas. You’ll also be confident in managing multiple service periods, overseeing the transition between breakfast, afternoon tea, and à la carte, while maintaining organisation, consistency, and clear communication throughout.
