Job Description Position Overview An upscale, high-volume culinary concept in Miami is seeking a Senior Sous Chef with a strong foundation in classical and contemporary French cuisine. This role requires a disciplined, technically skilled leader who thrives in a fast-paced kitchen environment while maintaining the highest standards of execution, presentation, and consistency. The Senior Sous Chef will serve as a key operational leader in the kitchen, partnering with the Executive Chef to drive culinary excellence, mentor the brigade, and ensure seamless daily service. Key Responsibilities Culinary Execution • Execute refined French cuisine with precision, consistency, and respect for classical technique., • Maintain strict adherence to recipes, plating standards, and quality benchmarks., • Lead service with confidence, ensuring timing, communication, and food quality meet elevated standards., • Oversee mise en place, station setup, and overall kitchen readiness for service., • Supervise and mentor line cooks and junior sous chefs., • Lead by example in professionalism, urgency, and attention to detail., • Train team members in French culinary techniques, knife skills, sauce work, butchery, and proper execution., • Manage food costs, portion control, and waste reduction., • Assist with inventory management, purchasing, and vendor relationships., • Ensure compliance with all local health department and food safety standards., • Maintain cleanliness, organization, and sanitation in accordance with HACCP principles., • Partner closely with front-of-house leadership to ensure an exceptional guest experience., • Step into full kitchen leadership in the absence of the Executive Chef. Qualifications • Minimum 5–7 years of progressive kitchen leadership experience., • Strong background in French cuisine (fine dining or upscale bistro experience preferred)., • Formal culinary education preferred., • Mastery of classical sauces, butchery, stocks, pastry basics, and French culinary technique., • Experience in high-volume, high-standard environments., • Proven leadership ability in managing and developing kitchen teams., • Strong organizational skills and ability to remain calm under pressure., • Solid financial acumen related to food cost and inventory management., • Ability to work nights, weekends, and holidays as required.
