Job DescriptionDescription: Position Overview As the Production Manager at Bread Alone, you will have the opportunity to drive the department to excellence by ensuring operations are not only safe and efficient but also fully aligned with our values and culture. You will collaborate with the Leadership team to develop and execute a best-in-class bakery program. This position encompasses both administrative and hands-on management, with at least 90 percent of your time spent in production. As a member of the leadership team you will be responsible for successful production and Boiceville campus operations. You will oversee the operations of the evening production team, ensuring the seamless execution of mixing, proofing, baking, and packing orders. This role requires strong collaboration to support the overall efficiency and success of the Bread Alone flagship location. Additionally, you will be expected to develop cross-functional expertise across various areas of the business to adapt to seasonal production demands. Hours: Our retail hours of operation on site are Monday–Sunday, 6:00 AM–3:30 AM with this role primarily needing an availability of 1pm - 10:30pm. Standard working hours range from 40–60 hours per week. Work schedules are designed to be flexible, with adjustments made as needed based on project demands and department needs. Employees may have rotating shifts, staggered start times, or flexible hours to accommodate workload variations while maintaining efficiency. Compensation Details: $61,000 - $71,000 annually Duties and Responsibilities: Duties, responsibilities, and essential job functions include but are not limited to the following: • Expect to work a dynamic schedule based on the needs of the business, including day, evening, late night, holiday, and weekend hours as needed., • Oversee and manage the day to day responsibilities of the PM shift., • Day to day responsibilities include PM Mixing, Viennoiserie Production, Bread Production, and Pack out. PM Mixing: • Oversee the afternoon mixing production which includes but is not limited to croissant dough, brioche dough, scones, cookies, etc Viennoiserie Production: • Oversee the baking of viennoiserie pastries, ensuring proper proofing, and baking techniques to achieve consistent quality., • Monitor and adjust proofing conditions, baking times, and temperatures to produce croissants, danishes, brioche, and other laminated dough products that meet quality standards. Bread Production: • Manage all aspects of bread baking, including fermentation, proofing, scoring, and baking, ensuring consistent execution., • Oversee the loading and baking process, ensuring proper oven techniques, steam control, and scoring to maintain high-quality artisan loaves. Sanitation: • Oversee the daily operations of the Boiceville Sanitation team. Pack Out: • Oversee the daily pack-out process, ensuring that all freshly baked products are accurately packed, organized, and ready for timely delivery to our locations in the Hudson Valley and NYC. This includes verifying invoices, conducting quality control checks, and ensuring all deadlines are met efficiently. General: • Collaborate with department leadership to build your team and recruit necessary personnel resources to maintain staffing levels., • Ensure that supervisors and professionals on your team follow production schedules and complete work correctly and promptly., • Ensure that all personal safety, culture, and food safety standards are being followed by all team members., • Communicate with other department managers about any performance or compliance concerns involving their teams., • Have a full working knowledge of safe equipment operation, calibration, routine maintenance, and troubleshooting within your department., • Address any interpersonal or operational issues as they arise and escalate when necessary., • Continuously analyze training materials to ensure they reflect the most up-to-date work standards., • Facilitate hiring decisions by conducting trials, assessing candidates, and managing the interview and onboarding process., • Provide hands-on training and performance management for continued team development., • Responsible for managing and covering requests for time off, and call-outs, • Actively listen to team members, provide constructive feedback, and escalate concerns as necessary., • Work with retail teams to analyze sales data to optimize production and menu offerings., • Document and implement effective operating procedures for organization and efficiency., • Routinely perform quality inspections on ingredients and finished products and address any defects., • Implement and maintain safety measures to promote a culture of safety at Bread Alone., • Able to stand for long periods of time while executing tasks quickly and accurately, • Able to to work in a physically demanding fast-paced environment, • Able to tolerate exposure to high levels of heat and cold, • Able to twist and bend repeatedly for long periods of time, • Able to pull, push, move and lift to waist level, • Able to carry awkward and shifting weights up to 50 pounds in a safe and controlled manner, • Able to work with, handle, operate, and control hot equipment and products in a safe manner according to Bread Alone guidelines, • Willing and able to work outside in all weather conditions, • Willing to follow all Good Manufacturing Practices which includes but are not limited to: Removing any visible or exposed piercings and body jewelry, personal accessories, false nails & refraining from makeup at work (ie. mascara or heavy foundation, lipstick), • Respect for and comfort with a diverse and inclusive workplace, • Able and willing to use personal protective equipment (PPE) and assigned uniform as required per company policy, • Able to gain proficiency in operating and instructing on the proper use of all systems(physical and technological) in use in your department, • Willing to follow all safety guidelines set out by Bread Alone, • Willing to take responsibility for your own and others safety by strictly enforcing all safety rules and regulations and taking steps to mitigate any unsafe conditions or practices enlisting the help of others as needed, • Willing and available to work across all shifts and stations associated with pastry and viennoiserie, • Willing and available to work additional hours as needed (holidays, menu launch, high season, etc), • The Bakery is open 365 days a year and team members must be willing to work consistently throughout the year which includes holidays and weekends Job Type: Full-time, exempt We Offer: • ESOP (Employee Stock Ownership Plan): Employees become eligible to participate in the ESOP if they have worked a minimum of 1,000 hours during that plan year., • Company-Wide Bonus: We believe in sharing success with our team.
