RESPONSABILIDAD DEL PUESTO El/La Director/a General del Restaurante Amar asume la responsabilidad integral del restaurante, tanto a nivel operativo como administrativo. Se requiere un liderazgo sólido y un talento comercial. Planea, organiza, controla y dirige la operativa del restaurante, tanto en sala como en cocina. Responsable del desarrollo operativo y comercial del punto de venta, con un enfoque en la calidad y consistencia. LIDERAZGO Y DIRECCIÓN Llevar la organización del servicio junto a su equipo de sala y cocina. Crear y desarrollar los SOP del restaurante, las descripciones de tareas de cada puesto, los check list y secuencias de servicio del restaurante, el programa de upselling y el libro de bienvenida de equipo. Implementar y desarrollar los protocolos y estándares operativos de Amar, además de los diseños y contenidos de las cartas de bebidas y comida, limpieza y controles de sanidad, control de los costes F&B, personal y otros costes de su área. Acompañar al equipo de Amar en la implementación de los estándares y protocolo de la compañía y del hotel, Leading y Forbes. Proveer un liderazgo visionario en la creación de productos de servicio y liderazgo de su equipo. Potenciar una comunicación interdepartamental proactiva, eficiente y efectiva en Amar, en el área de restauración y en el resto del hotel. Reclutar, formar, evaluar, acompañar y desarrollar el equipo de Amar. Apoyar y asegurar que el equipo guarde un espacio de restaurante limpio y ordenado, cumpliendo con el protocolo interno del hotel y ISO9000. Asegurar el buen funcionamiento de toda la maquinaria del restaurante. Hacer seguimiento de petición de presupuestos a mantenimiento y proveedores. Responsabilizarse de toda la máquina, mobiliario y utensilios puestos a disposición. Colaborar con los otros jefes de departamento del hotel para asegurar una comunicación fluida de toda la oferta gastronómica y horarios de Amar. Identificar las zonas de mejoras continuas con los reportes utilizados por la compañía y los comentarios de los clientes vía correos y redes sociales. Establecer planes de acción si necesario. Colaborar con el jefe de compras para identificar y trabajar con los proveedores y precios adecuados. Asegurar que el equipo respeta todos los estándares de apariencia dentro y fuera del hotel y refleja profesionalismo a todo momento. Fomentar el buen ambiente social en el equipo de cocina, sala y hotel. Desarrollar los roles de responsables del restaurante para asegurar la calidad y la gestión de la sala durante su ausencia. Organizar briefings diarios para informar su equipo de novedades, cambios y formaciones. FINANZAS Y ADMINISTRACIÓN Observar los forecast del negocio para planificar de manera eficiente la plantilla, las compras de materias primas, costes de mantenimiento y compras varias. Participar a la elaboración del P&L anual para establecer los costes apropiados. Analizar cada cuenta de explotación mensual, costes - proponer acciones para remediar a las desviaciones. Respetar los objetivos definidos por la empresa. Preparar de manera eficiente los turnos semanales dependiendo del volumen de los operaciones y reservas del restaurante, planificando vacaciones y días de recuperación. Entregarlos con antelación para asegurar la estabilidad de su equipo. Crear y actualizar los escandallos, recetas, instrucciones, guías de cada platos y bebidas. Decidir, junto sus superiores, los precios de venta de cada producto. Realizar mensualmente el menú engineering, junto al Chef Ejecutivo, sobre carta y menús. Participar en la creación de los diseños de carta y menús. Utilizar la vía correcta de compras de material y reparaciones varias. Entregar, cada uno del mes, los inventarios de bebida y comida y otros productos al departamento de administración del hotel. Seguir los protocolos administrativos de la empresa. Entregar cada mes los reportes de rotura y merma al departamento administrativo del hotel. Encontrar soluciones si necesario. Ofrecer ideas para mejorar los costes relacionados a la operativa del punto de venta. Gestionar la programación del POS y utilizar los reportes adecuados al negocio. Gestionar y contabilizar semanalmente las invitaciones del restaurante. RECURSOS HUMANOS Desarrollar y motivar al equipo con formaciones regulares. Asegurar que el equipo este formado sobre toda la oferta gastronómica del restaurante. Organizar mensualmente una reunión de equipo sala y cocina para promover una comunicación fluida entre equipos. Trabajar junto a RRHH sobre reclutamiento y entrevistas, según el presupuesto establecido por la empresa. Liderar como ejemplo. VENTAS Identificar las oportunidades de ventas según las necesidades de cada cliente, individual y grupos. Colaborar con el equipo de ventas del hotel, proponer sugerencias de ofertas para aumentar la facturación de grupos en Amar. Optimizar y rentabilizar cada espacio del restaurante. Responsable, junto al hotel, de llevar las reservas y peticiones de grupos, acomodar al máximo las peticiones de todos los clientes. Establecer una base de datos de clientes del restaurante a través del sistema de reservas y utilizarla para actualizar los clientes de las ofertas gastronómicas del restaurante. Desarrollar las ventas del restaurante, de la barra, del privado y de la mesa del chef. Desarrollar eventos especiales para el restaurante, gestionando músicos y proveedores de eventos cuando sea necesario. Entender la filosofía del hotel para desarrollar la venta interdepartamental. Efectuar unos estudios de la competencia, a lo menos dos veces al año. Establecer una relación estrecha con las personas claves de la ciudad (conserjes, secretarias, empresarios). EXPERIENCIA DEL CLIENTE Asegurar la satisfacción de cada cliente según la filosofía del restaurante. Asegurar la máxima calidad de los productos de la oferta gastronómica de carta y menús. Reunirse con clientes potenciales para organizar futuros eventos. Flexibilizar menús de grupos y eventos especiales para aumentar las confirmaciones de negocio. Liderar, motivar el equipo de sala para proponer nuevas ideas gastronómicas y desarrollar la oferta del restaurante. Analizar y responder los comentarios recibidos por parte de los clientes del restaurante. Establecer una ficha técnica de cada cliente de alto nivel con sus preferencias y hábitos.
