The role As a Bar Assistant Manager, you'll work closely with the Bar Manager to run the day-to-day bar operation at Brasserie Olivia. You'll lead and support the bar team during busy services, making sure drinks are prepared quickly, consistently and to the highest standard. You'll support the Bar Manager with rotas, ordering, stock and waste, while helping train and develop the team. Our bar sits at the heart of the restaurant, so you'll also be present with our guests, bringing energy, personality and great hospitality. What success looks like • You'll help run and organise a bar where drinks are prepared quickly and consistently, even during the busiest services., • You'll ensure the bar is fully prepared for service, with stock, equipment and mise en place ready before the first guests arrive., • You'll maintain excellent standards across cocktails and drinks, making sure everything is consistent and beautifully presented., • You'll support the Bar Manager with rotas, ordering, stock management and waste control, helping the bar run efficiently., • You'll coach, train and support bartenders, helping build a confident, knowledgeable and high-performing team., • You'll support recruitment by coordinating trial shifts and identifying candidates who will strengthen the team., • You'll create a great guest experience, interacting naturally with guests and bringing positive energy to the restaurant., • You'll work closely with the floor and kitchen teams to keep service running smoothly throughout every shift.
