The Role As Kitchen Manager, you will oversee the day-to-day running of the kitchen, ensuring exceptional food quality, efficient operations and full compliance with food safety standards. Key Responsibilities Kitchen Operations • Lead the daily operation of the kitchen during service., • Prepare and oversee the preparation of all menu items to company standards., • Ensure every dish is presented consistently and served efficiently., • Maintain a clean, organised and fully operational kitchen at all times., • Monitor food quality, portion control and presentation., • Ensure all food is prepared safely and in line with HACCP and food hygiene regulations., • Manage prep schedules to ensure the kitchen is ready for every service., • Maintain kitchen equipment and report maintenance issues promptly. Leadership & Team Management • Recruit, train, coach and develop the kitchen team., • Lead by example, creating a positive and accountable working culture., • Schedule staff effectively to meet business needs., • Conduct regular performance reviews and provide ongoing feedback., • Manage disciplinary and performance issues in line with company procedures., • Foster strong communication between the kitchen and front-of-house teams. Stock & Cost Control • Manage stock levels and place supplier orders., • Carry out weekly and monthly stock takes., • Monitor food margins and work to achieve GP targets., • Reduce waste through effective stock rotation and portion control., • Ensure deliveries are checked, stored correctly and recorded accurately. Food Safety & Compliance • Ensure full compliance with Food Safety, HACCP, COSHH and Health & Safety regulations., • Maintain accurate food safety records and temperature logs., • Ensure all team members hold appropriate food hygiene knowledge and training., • Keep the kitchen inspection-ready at all times. Business Performance • Work with management to improve kitchen efficiency and profitability., • Contribute to menu development and seasonal specials., • Identify opportunities to improve systems, workflows and service., • Support new menu launches with recipe development, costings and staff training., • Help achieve labour, food cost and profitability targets. What We’re Looking For • Previous experience as a Kitchen Manager, Head Chef or Senior Sous Chef., • Strong leadership and people management skills., • Excellent knowledge of food safety and kitchen compliance., • Experience managing food costs, GP and stock control., • Ability to perform under pressure in a fast-paced environment., • Strong organisational and communication skills., • Passion for delivering exceptional food and guest experiences.
