Job Description Job Title: Dietary Director Department: Dietary FLSA Status: Non-Exempt Reports to: Executive Director JOB SUMMARY: Responsible for the proper service of timely, temperature appropriate and nutritious meals to residents in the dining room and other food venues, maintaining cleanliness of the kitchen service areas and record-keeping functions. Assists other dietary employees with cleanliness and sanitation of other food service areas. Acts as a cook when needed. Orders supplies/food, prepares healthy menus, oversees all dietary staff including the hiring and scheduling. Maintains dietary budget. ESSENTIAL FUNCTIONS: • Complete scheduling and direct supervision of dietary employees., • Maintenance of recording functions, i.e. resident diet record, daily meal count, cleaning checklist, inventory and quality control records., • Assists in the preparation of food items., • Ensures dining room is clean and prepared before each dining service., • Ensures Servers are prepared in uniform, with a smile and good attitude., • Ensures Servers are rounding on each table, fill glasses as needed and bus tables to clear tables for better resident satisfaction., • Instructs Servers to reject food that doesn’t meet the standard for eye appeal or right temperature of food., • Ensures that staff clears tables, cleans dining room floor, dining room counter area, dishwashing tasks, other cleaning, and sanitation duties as needed and as assigned., • Maintain adequate supplies at station for serving food, including paper goods, dishes, flatware, glassware, and condiments., • Identifies each resident, maintains familiarity with diet needs of each resident., • Conducts inventory of perishable foods and supplies as directed., • Orders food and supplies following established procedures as directed., • Supervises food production/quality control, maintaining highest standards., • Maintains and distributes Material Safety Data Sheets (MSDS)., • Maintains the highest standards of cleanliness and sanitation in the kitchen and dining room. Responsible for implementing weekly kitchen deep cleaning schedules., • Maintains expenses and spenddown as well as managing the budget., • This manager will maintain a hands-on approach to ensure tasks are completed efficiently and to the highest standard., • Meets with Residents on a regular basis (at least 1X a Month for Food Council) to ensure menus selection and feedback is appropriate and received., • Meets with Dietary Team regularly to ensure resident feedback is implemented., • Ability to work with little or no supervision., • Ability to prepare and serve a wide range of foods skillfully., • Ability to guide and instruct others in food preparation and food serving., • Ability to maintain professional demeanor under stress., • Ability to recognize needs and help others without prompting., • Ability to relate well with other employees and residents of the Community., • Is neat, clean and works safely., • Ability to read, write, and speak English., • Has the ability to spend long periods on feet., • Abides by established policies and procedures of Community. Looks for ways to improve Community functioning., • Respects resident rights and adheres to Community philosophy of resident care., • Working knowledge of rules and regulations related to health and safety in food preparation., • Demonstrated ability in food service management and services., • Experience in dealing with the elderly and their dietary needs., • Knowledge of food costs and budget comparisons., • 18-24 months’ experience in a similar position preferred., • State Criminal Background Check and LIC 508 Criminal Record Statement., • Tuberculosis (TB) clearance as required by State., • First Aid and CPR Certifications as required by State., • Criminal Background check cleared., • Certification and/or License as required by State., • Fingerprint clearance as required by State., • Must be at least 18 years of age as outlined in state regulations. Physical Demands: • Ability to stand and walk for extended periods., • Ability to stoop, kneel, crouch, or crawl as part of regular duties., • Ability to talk and hear to communicate effectively with residents and staff., • Ability to lift and/or move up to 50 pounds independently., • Sitting, • Use of hands and fingers to handle or feel, • Reaching with hands and arms, • Tasting or smelling, • Regular interaction with co-workers, residents, and vendors., • Occasional evening, weekend, or night shifts may be required to ensure proper shift coverage., • Subject to potential exposure to:, • Communicable diseases and infections, • Physical injury from transferring, repositioning, or lifting residents, • Various drugs, chemicals, infectious, or biological hazards, • Environmental hazards such as falls, burns, odors, or equipment-related injuries, • On-call work may be required on an as-needed basis., • Occasional travel may be necessary., • There is no anticipated regular exposure to latex or blood-borne pathogens. Professional office environment. Uses PC, telephones, word processing and other standard office equipment. Attends business-related functions. Occasional travel to communities, various sales calls and industry meetings/conferences. MANAGEMENT/DECISION MAKING: • Complete scheduling and direct supervision of dietary employees. Supervises food production/quality control, maintaining highest standards., • Responsible for the hiring, disciplining and termination of dietary employees under director’s purview.
