Job Description The Machine Operator is responsible for operating, monitoring, and maintaining pasta production and packaging equipment. This role supports the consistent production of high-quality pasta products while following all food safety, quality, and operational standards. Key Responsibilities Pasta Production & Equipment Operation • Set up, operate, and shut down pasta-making machinery such as mixers, extruders, sheeters, dryers, cutters, and packaging lines., • Load and measure raw ingredients (semolina, water, dough additives) according to specifications., • Monitor dough consistency, extrusion quality, pasta shape integrity, and drying conditions., • Conduct visual checks for pasta color, texture, moisture levels, shape uniformity, and defects., • Verify product weights, packaging integrity, and production code dates., • Follow all GMPs, HACCP programs, allergen controls (e.g., wheat/gluten), and sanitation standards., • Identify line issues, jams, or inconsistencies in dough flow and perform basic adjustments., • Perform minor maintenance and cleaning of equipment and report larger mechanical problems to maintenance., • Follow all safety rules including lockout/tagout, hot-surface precautions (dryers), and machine guarding., • Communicate equipment performance, ingredient issues, or quality concerns to supervisors and QA., • Coordinate with production line team members to maintain continuous product flow., • Assist in training new operators or line workers as needed. Qualifications Required • High school diploma or equivalent., • Experience in manufacturing; food production experience preferred., • Ability to operate automated or semi-automated machinery., • Strong attention to detail and ability to follow recipes, SOPs, and production schedules., • Basic mechanical aptitude and ability to make small machine adjustments., • Previous experience in pasta manufacturing or grain-based food production., • Familiarity with extruders, sheeters, drying tunnels, or high-speed packaging equipment., • Knowledge of GMPs, HACCP, and food safety regulations. Physical Requirements • Stand for long periods; perform repetitive tasks., • Lift up to 50 lbs (e.g., bags of semolina or ingredient totes)., • Work in warm, humid environments near dryers or cool areas near packed finished goods., • Ability to bend, reach, climb stairs/ladders to access production equipment. Work Schedule Full-time; may include overtime, weekends, or rotating shifts depending on production needs.
