Location:Westbourne Park Road, Notting Hill Full-time Start date: March 2026 About Darlish Darlish is an award-winning Middle Eastern-inspired ice cream brand with a loyal following for Persian flavours like Saffron, Rose & Pistachio and Tahini. We've been serving London at Spitalfields, and now we're opening our latest flagship on Westbourne Park Road, just off Portobello Road. We're not looking for someone to just "manage a store." We're looking for someone to open, lead and grow the flagship and become a multi-site leader as we expand over the next 18 months. What you'll own You are the face, the energy and the standards of Darlish Notting Hill. Launch the shop: soft opening, first 100 days, local PR, building the Portobello regular base. Lead the floor every shift greeting guests, managing queues, coaching your team in real time, not from an office. Hit the numbers: weekly sales and labour targets, protect GP through upsell and careful stock management, read a simple P&L and take action when things drift. Build and develop an 815 person team across evenings, weekends and summer peaks rota in workforce management, onboard, give feedback, handle the tricky conversations. Keep it flagship-standard: product quality, presentation, cleanliness, atmosphere, compliance every shift. You report to the franchise owner. Your feedback doesn't get lost in layers it gets actioned. About you Experience 23 years as Store Manager or strong Assistant Manager in QSR, café or dessert (£500k£1m+ annual sales preferred). Proven record hitting weekly sales, labour % and waste targets you care about the numbers, not just vibes. Comfortable running busy shifts on your feet, especially evenings and weekends in a seasonal business. Bonus (not essential): You've opened or refurbed a site, or worked somewhere that scaled from 13+ locations and you saw how systems get built. Behaviours the stuff that actually matters Floor-first leader: Guests see you. Your team works with you, not for you. You're coaching in the moment, not reviewing footage later. People magnet: You set standards and give feedback, but your team still wants to come to work. That balance is rare we need it. Commercially curious: You want to understand sales per hour, labour %, what moves GP and how small tweaks compound. We'll teach our model; you bring the hunger to improve it. System-builder, not firefighter: You follow checklists, improve them, and create new ones. You don't just "handle it differently every time." Into the product: You're genuinely excited to talk about our flavours and why Darlish is different. If ice cream bores you, this isn't your role. Ambitious: You want a multi-site / Area Manager role. You see Notting Hill as the launchpad, not the ceiling. No prior Darlish or ice cream parlour experience needed we'll teach you our system. But you must be able to work evenings, weekends and be realistic about summer peaks in ice cream. What you get Salary £34,000. Contract Full-time, 45 hours per week.
