Purpose: Manage and develop all aspects of the bar and catering operations across the Theatres Service under the direction of the Front of House Manager in a manner which is based on industry best practice, and which complies with relevant policy and regulatory frameworks. Work closely with Front of House Duty Manager to maximise the existing bar and catering income and identify opportunities for new revenue streams and services. Lead on the development and implementation of a new food offer for the Victoria Theatre. Main duties and responsibilities 1. On occasion to work as a Duty Manager for performances and events held in the Theatre., 2. Ensure the safe, efficient and legislatively compliant management of all events and activities taking place in the bar areas of the Theatres Service, including the safe and efficient evacuation of customers, staff and artistes., 3. Manage the recruitment, training and retention of the Bar and Catering staff teams, ensuring that all Health and Safety, licensing legislation and high-quality customer care training is delivered and maintained., 4. Improve the financial sustainability of the Victoria Theatre by maximising income from bar and catering operations and identifying opportunities for new revenue streams and services., 5. Effectively manage the ordering of stock, the management and control of wet and dry stock., 6. Periodically test the market for products to ensure that the service provided is both relevant and attractive to audiences and maximises income generation., 7. Develop new ideas and initiatives to enhance the Bar & Catering offer and contribute to the cultural programme and help drive income generation., 8. Lead on the design and delivery of the food and catering offer for the Theatres Service bars., 9. Manage all aspects of the Theatres Bars and Catering POS system in liaison with external partners., 10. Be a member of the Theatres Service Management Team and deputise as required., 11. Produce and present statistics and reports and presentations relating to the bar & catering operation for both internal and external partners., 12. The planning and management of bar events both at the theatre and other Theatres Service venues, including staffing, secondary sales, stock, and company requirements., 13. Develop and maintain quality assurance systems to ensure that the Bar and Catering Team deliver excellent customer care to customers and visiting companies., 14. Manage sound financial income and expenditure procedures in the Theatres Service bars, including end of day procedures, management of card payments, preparation of reports relating to income collected in the bar areas.
