In September 2021, maman founders Elisa Marshall Benjamin Sormonte released the highly anticipated maman: the cookbook. We're looking for a passionate Pastry Chef to join our Charlotte team! Our ideal candidate is passionate about food and welcoming customers through our doors. You have experience in successfully managing a team, fostering unity, and working together to accomplish daily goals. No task is too small for you. You'll be able to speak authentically about who we are, and every item on our food and beverage menu. You love cookies, you are always ready to lend a helping hand to a colleague you don't take yourself too seriously. You will be based at our Charlotte Commissary location. Responsibilities of this Role (What you'll do): • You will be working as the Pastry chef of Maman Charlotte in the commissary kitchen located in the Commonwealth area;, • You will be in charge of the Pastry department working in close contact with the Savory Chef and Pastry Director;, • Organization of the production of the menu and catering/events orders with the team;, • Hiring, training, documenting. growing and scheduling your team;, • Supplying different locations of freshly baked goods on a daily basis;, • Cost control, stock management, ordering and maintaining adequate par levels;, • Quality and quantity control in regards to the company standards;, • Leading a growing team forward;, • Report directly to your supervisors about any upcoming changes, positive and negative and effectively communicate with them regarding of your team;, • Organizing commissary deliveries for the stores in the time frame scheduled and communicating efficiently in case of any changes, • Able to communicate with other regional leaders and General managers in a timely manner., • Ensure food and labor costs stay consistent and follow company guidelines., • Create a dynamic and RESPECTFUL work environment with little to no pressure for yourself and the team. (Everything is about anticipation and organization)., • Maintain the cleanliness of the kitchen and production at the highest standards and as per the state health department and FDA guidelines., • Maintain the quality of any preparations at the highest standards. Similarly, educate and inform your team about your vision of what is good and what is not;, • Efficiently and thoroughly inspect the quality of any supplies received at the kitchen and inform the person/company concerned in case of an issue;, • Work a flexible schedule that will include weekends, holidays, special events, and or occasional emergencies if needed.
