Ensuring the highest possible standard of presentation & cleanliness in all areas of the kitchen (both in the kitchen itself and & back of house areas). Maintaining a clean and orderly cooking station. Showing full support to senior staff, the goals and ideals of the operation, working continually towards the betterment of our members expectations. Controlling the wastage and the costs of their section, and meeting budget specifications. Storing of food and provisions including raw material quality checks. Allocating duties to demi-chef de parties and commis chefs. Supporting and participating in activities, which may serve to improve our operations or the efficiency of the business. Keeping all H&S and Food safety documentation and reporting up to date including temperature records, retained & cooked, food logs, delivery standards and probe calibrations. Ensuring that the kitchen, stock rooms are cleaned to a high standard. Assisting the BOH Manager in ensuring the kitchen equipment is properly maintained and report any faults with equipment to him. Preparing and assisting with regular stock takes. Ensuring that, in general, all stock is secure and there is no stock loss from the Kitchen. Who are we looking for?
