The kitchen manager is responsible for all kitchen functions, including but not limited to food purchasing, receiving, preparation, and maintenance of quality standards, safety, sanitation, and cleanliness. The kitchen manager is responsible for training clients in connection with purchasing, receiving, menu formulation, food preparation, inventory, and maintenance of quality standards, safety, sanitation, and cleanliness. Responsibilities: • Ensure that all food and products are consistently prepared and served according to the agency portioning, cooking, and serving standards., • Responsible for ordering food products according to predetermined product specifications and receiving them in the correct unit count, condition, and deliveries are received in accordance with agency policies and procedures., • Control food cost and usage by following proper requisition of products from storage centers (i.e., Utah food bank and Nicolas and Company), ensure proper product storage procedures, standard recipes, and waste control procedures, including checking and maintaining proper food holding and refrigeration temperature control points., • Fill in where needed to ensure proper service standards and efficient operations., • Work and train clients to plan and price menu items. Establish portion sizes and prepare standard recipes., • Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following the agency's preventative maintenance programs., • Manage vocational kitchen training structure, responsibilities, duties, interventions, and reports., • Facilitate Vocational training department meetings 1x per week and provide accurate documentation, as per Odyssey House expectations., • Make kitchen personnel decisions, including interviewing, hiring, evaluating, and disciplining kitchen personnel, as appropriate., • Provide the orientation of kitchen department rules, policies, and procedures and oversee the training of new kitchen department members., • Prepare all required paperwork, including forms and reports, and schedule in an organized and timely manner., • Organize and facilitate weekly Kitchen Department meetings and document promptly and appropriately., • Create and maintain a weekly schedule of department members, ensuring that all meals and events are staffed as needed., • Be knowledgeable of State, County, and City regulations and adhere to Health Department requirements and expectations., • Oversee the training of kitchen department members in the safe operation of all kitchen equipment and utensils, • Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, and other equipment and food storage areas, • Provide safety training for lifting, carrying objects, and handling hazardous objects., • Attends all scheduled staff meetings and brings suggestions for improvement, • Will also function as the Liaison between Workforce Services and Odyssey adult residential facility, • Responsible for oversight of urine analysis testing. Will oversee Dominion diagnostics and report positive, missed, and/or adulterated drug screens to supervisor and/or adult residential staff., • All other duties as assigned.Requirements: Preference will be given to candidates with at least one year in varied kitchen positions, which include food preparation, line cook, fry cook, etc. • High school or equivalent preferred., • Serve Safe Certificate preferred but not required,, • Food handlers permit, • 21 years old or older, • Strong Leadership skills, • Possess strong organization and decision-making skills, • Works well in team situations, • Effective Communication Skills, • Mature and professional, • Exceptional hygiene and grooming standards, • Willingness and ability to pass a criminal background check, • First Aid and CPR Certification (available at Odyssey House), • Must comply with annual TB tests, Flu, and other immunizations as required, • Must meet employment eligibility, • Must be able to work variable shifts as needed Employment offers are contingent upon successful completion of required pre-employment screenings, which may include background checks, fingerprinting, applicable sex offender registry screenings for Adult Residential roles, and other position-related verifications. Roles requiring driving are subject to a Motor Vehicle Record (MVR) review and valid Utah driver’s license. Physical Demands of the Job: Ability to lift up to 15 lbs., drive (or adequate alternate transportation), sit for prolonged periods, and perform light to moderate physical activity at times.
