Ensure casual staff/ agency staff are briefed when arriving to shift and standards are maintained throughout Organise and manage, with the support of Group Exec Pastry Chef and Head Pastry Chef the daily and weekly pastry production sheets and delegate tasks to individual staff to maintain a well-organised efficient system Ensure consistency in the planning and execution of all events (i.e ordering, preparation, kitchen load list, equipment, temperature sheets ect) and that they meet the required standards Ensure all events are dispatched correctly, accurately labelled, numbered and timings crossed-checked with logistics team to ensure effective delivery Attend pre-event meetings (in absence of Group Head Pastry chef/ Head Chef) ensuring that all relevant information is communicated effectively to the seniors and wider team. Liaise with Head of Logistics /Group Head of Operations to ensure suitable vehicles are available as required for particular/restricted venues and that all food is transported in line with the companys Food Safety Policy. Work with Group Head Pastry Chef and Head Chef to ensure the correct number of staff are provided for weekly production Contribute towards the development of new dishes and menus in conjunction with Group Executive Chef and Head Pastry Chef Ensure all paperwork is accurately complete within deadline timeframes, and that these are checked daily and cross-checked with the Head Pastry Chef Taking an active role in gaining information regarding new products and ingredients, kitchen budgets and costings etc. to gain a greater understanding of the kitchen and food production As Senior Pastry Sous Chef you will be required to work on evening shift events up to 3 nights a week (during exceptionally busy months) upon discussion with Head Pastry Chef and weekends, when required. You will be required to update and write any new developed recipes into the server on the designated folder Assist the Head Pastry Chef with the ordering and purchasing of required food/ disposable products Ensure FIFO is followed, dry store is correctly managed and maintained clean and labels are up to date Train the junior members of the team to ensure they have a clear understanding of the standards required. Meeting the requirements of the Groups Corporate Social Responsibility Policy reducing wastage in all aspects of the operation and disposal of food and other materials with minimum impact on the environment. HEALTH & SAFETY/FOOD SAFETY DUTIES Support the on-site kitchens to ensure the Groups Food Safety Policy, Health and Safety and current legislation are adhered to at all times, ensuring all records are up to date and submitted to the Kitchen Manager for retention as required Ensuring the on-site kitchen and all equipment are cleaned and hygienically maintained as with COSHH and Health & Safety legislation Assist the Group Health and Safety officer in the implementation and monitoring of the company Health & Safety and Food Safety Policy Complete all training to include but not exclusively, mandatory and online training Any other reasonable duties as required in pursuit of the efficient and profitable management of the company.
