Job Description Title: Manager of Culinary Services Location: Rogers Park, IL Schedule: On-Site, Tuesday to Saturday (10:00am - 6pm) Summary: Bring your passion for food and leadership to a role that makes a difference. Heartland Human Care Services is looking for a Manager of Culinary Services to lead the daily operations of our kitchen and dining room in a residential facility for youth, as well as catered events. You’ll oversee food preparation and service, supervise kitchen staff, ensure safety, and maintain full compliance with health codes, while rolling up your sleeves to work alongside the Culinary team in every aspect of food preparation. In this role, you’ll combine hands-on culinary expertise with leadership that inspires excellence. BCBS PPO, EPO, and HSA Plans, • Dental insurance., • Vision insurance., • 401(k) 3% Employer Contribution., • Paid maternity leave., • Paid paternity leave., • Commuter benefits., • Professional Development Assistance., • Disability insurance, • FSA Spending Account, • Life Insurance, • Employee Assistance Program Duties & Responsibilities Departmental Management & Supervision • Manages kitchen and dining room operations, ensures compliance with applicable food services’ sanitation and other safety standards, and ensures the satisfaction of program needs., • Supervises and works alongside kitchen staff with food service preparation for regular meals, catering orders and special events., • Manages all aspects of the Safety catering operations, including the delivery of catering orders for internal and external events and for working alongside staff in providing service at catered events., • Supervises the performance of routine tasks in the dining room and kitchen by program participants, which include setting, clearing and cleaning tables before and after meal service, among others., • Maintains documentation related to the safety and state of the kitchen and dining room, including state fire marshal reports, Board of Health inspections, annual sprinkler test reports, and more., • Maintains invoices for Goods and Services., • Places orders for food and relevant supplies through a computerized system., • Oversees ordering, billing and receiving of food and general supplies., • Oversees purchasing, waste control, storage, product handling and inventory, and reviews invoices to ensure cost and quality controls., • Responsible for quality control of the food and all processes of the kitchen., • Participates in the development of long-range plans, service delivery models and other strategies and/or systems., • Adheres to professional standards and assists in the development of organizational plans/policies related to professional standards., • Provides periodic evaluative reviews and/or in-house and external staff training to ensure that staff understand and continue to adhere to such standards., • Initiates request for assistance or guidance from Supervisor to address new issues or compiles concepts affecting adherence to professional standards., • Maintains an appropriate professional demeanor toward co-workers, visitors, clients, supervisors and all others., • Achieves budgeted cost of food through proper utilization of products and food, storage of food, and waste control., • Maintains statistics on menus and food services and ensures compliance with health and nutrition guidelines as well as the Illinois State Board of Education production records and documentation requirements, among other accountabilities in preparation of the School Nutrition Programs Administrative Review., • Maintains documentation related to the safety and state of the kitchen and dining room, including state fire marshal reports, Board of Health inspections, city and state foodservice sanitation licenses of all kitchen staff, annual sprinkler test reports, and other required documentation., • Reporting positions may include: Cook I, Cook II, Utility Workers, Lead Cook, Kitchen Supervisor., • Prepares Annual performance evaluations, holds monthly professional development meetings, and provides in-house and external staff training as needed for assigned staff, with guidance from higher level Manager(s)., • Bachelors Degree or equivalent years of experience can be in place of bachelors degree in case of high school diploma., • Culinary Arts degree or certificate preferred., • 5-6 years of professional kitchen experience, including at least 2-3 years in a supervisory or lead role., • State and city food service sanitation certificate should be valid at time of hire or must be obtained within 3 months of employment., • Ability to read and interpret documents such as operating and maintenance instructions, safety and sanitation guidelines and procedure manuals., • Ability to speak effectively before groups of children and/ or other employees of the organization., • Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form such as standardized recipes, dietary restriction etc., • Access to regular, dependable and timely transportation, • Ability and comfortability working with people of varying socioeconomic backgrounds., • Excellent communication skills. Strong networker, convener, relationship builder and communicator with experience collaborating with diverse work teams and stakeholders., • Demonstrated ability to handle confidential and sensitive information possessing skills to handle situations in a professional and diplomatic manner., • A high degree of collaboration and emotional intelligence, self-motivation, and analytical ability., • Proficiency in Microsoft Office, Internet Explorer, Outlook/Exchange; Windows operating systems; and other software routinely used by Heartland Human Care Services., • Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form., • Ability to work independently and remain self-motivated with minimal direct supervision. This role is an in-person job with kitchens located throughout the Chicago area, including the North and South sides. Employees may be required to report to any one of our locations on a temporary or permanent basis as needed.
