ROLE PURPOSE The Senior Chef de Partie is responsible for leading a kitchen section, with a focus on Robata grilling and other key Japanese culinary techniques. This role requires advanced culinary skills, strong leadership, and the ability to maintain high-quality standards while supporting the kitchens creative and operational goals. The Senior CDP ensures smooth service, consistency, and efficiency across the section while mentoring junior staff. You will be a visible presence in the kitchen, calm under pressure, generous with knowledge, and deeply committed to quality, consistency, and culture. KEY RESPONSIBILITIES Responsibilities may include, but are not limited to: Cooking & Culinary Expertise Lead the preparation and cooking of dishes in your section, specializing in Robata grill items, kamameshi rice, and other Japanese dishes. Maintain consistency in taste, presentation, and portioning according to Mitsu standards. Execute complex techniques and ensure high-quality plating for all menu items. Contribute to menu development and seasonal specials, incorporating creativity and sustainability. Leadership & Section Management Take full ownership of your section during service, delegating tasks effectively to junior chefs. Supervise, train, and mentor Chef de Parties and Commis within your station. Ensure smooth communication and coordination with other kitchen sections and front-of-house staff. Monitor kitchen equipment, tools, and workspaces, ensuring they are clean, organized, and functioning properly. Quality, Safety & Standards Uphold the highest standards of food hygiene, safety, and cleanliness. Maintain ingredient quality, ensuring freshness and proper storage. Support Mitsus zero-waste philosophy through careful stock control and portion management. Assist in troubleshooting issues during service and take proactive measures to maintain quality and efficiency. Teamwork & Development Act as a role model for junior kitchen staff, demonstrating professionalism, technique, and consistency. Collaborate with the Head Chef and Sous Chef to improve kitchen processes and service delivery. Foster a positive, energetic, and team-focused kitchen environment aligned with Mitsus brand and culture. Required Skills & Qualifications: Proven experience as a Senior Chef de Partie or equivalent role, ideally in Japanese or Asian cuisine. Expertise in Robata grilling techniques and Japanese culinary methods. Strong leadership, coaching, and mentoring skills. Ability to work in a high-volume, fast-paced environment while maintaining consistency. Excellent organizational, communication, and teamwork skills.
