As Cluster Head of Food and Beverage, you'll play a crucial role in bringing that magic to life. Role Purpose: The Cluster Head of Food and Beverage is responsible for the overall leadership, operational performance, and commercial delivery of all food and beverage outlets across the cluster. The role ensures consistent service standards, food quality, and guest experience across multiple hotels. As the senior food and beverage leader for the cluster, the role owns operational cost control and food cost performance, delivering financial targets through accurate forecasting, labour management and stock control. Working in close partnership with Executive and Head Chefs, the role leads the implementation of the Hub menus, promotions and commercial initiatives across the cluster. The role builds and develops high performing food and beverage teams through strong people leadership, succession planning and a focus on multi-skiling and engagement. The Cluster Head of Food and Beverage ensures full compliance with food safety, health and safety and licensing requirements while driving continuous improvement within agreed governance. Responsibilities: • Operational delivery: Lead day-to-day food and beverage operations across the cluster, covering all outlets, ensuring smooth service delivery, effective shift handovers and strong front line leadership. Drive multi-skiling across teams to ensure flexibility and the ability for team members to work across the cluster., • Line management and culinary leadership: Line manage Executive and Head Chefs across the cluster, setting objectives, conducting performance reviews and mentoring culinary leadership to ensure consistent food quality and adherence to menu specifications across all outlets., • Implementation of corporate initiatives: Land and execute Hub menus, promotions and revenue initiatives across the cluster in partnership with Executive and Head Chefs, ensuring consistency, effective training and strong commercial execution., • P&L execution and food cost ownership: Own operational cost control for food and beverage across the cluster, including food costs, wet stock margins, labour, waste and stock control. Deliver departmental financial targets through accurate forecasting, ordering and reporting., • Inventory and purchasing control: Oversee kitchen stock control, supplier relationships and purchasing accuracy across the cluster, managing audits and corrective actions to protect margins and ensure compliance with procurement processes., • Labour and rota management: Forecast and produce efficient front of house and back of house rotas across the cluster, controlling labour spend and maintaining appropriate cover to deliver required service standards., • Guest experience and quality assurance: Maintain service and culinary standards across the cluster, continually monitoring and quality assessing front and back of house operations and coaching teams to deliver consistently memorable guest experiences., • People management and retention: Recruit, train, develop and performance manage the food and beverage team across the cluster, implementing retention and succession plans to maintain engagement, capability and morale., • Compliance and safety: Ensure full compliance with food safety, health and safety and licensing requirements across all kitchens and outlets within the cluster, managing audits and corrective actions effectively., • Deputising and collaboration: Undertake Duty Management shifts across the cluster, deputise for senior leaders when required and work closely with Sales, Events, HR, Procurement and the Hub teams to maintain brand standards and business continuity., • Continuous improvement and commercial strategy: Identify operational efficiencies and service improvements and develop commercial strategies with Executive and Head Chefs to maximise sales within The Hub parameters., • Governance: Operate within approved financial sign off limits and procurement processes across the cluster, escalating issues outside delegated authority to the General Manager as required. Behaviours, Skills & Experience • In depth knowledge of multi-site food and beverage operations within a hotel or comparable hospitality environment., • Strong understanding of food and beverage financial management, including food cost control, labour optimisation, wet stock margins and commercial performance., • Comprehensive knowledge of food safety, health and safety and licensing requirements across multiple sites., • Significant experience in a senior food and beverage leadership role within a hotel or comparable hospitality business, ideally across multiple sites., • Proven experience of delivering financial and operational targets at a senior level, including cost control, margin delivery and team performance., • Relevant hospitality qualification or equivalent professional experience, with appropriate food safety and health and safety certification.
