Job Description Job Summary We are looking for an experienced Restaurant Executive Chef to lead our Vita Italian Bar & Grill at Doubletree by Hilton Hotel Pomona. This Leadership position functions as Culinary Leader support for our Vita Italian Bar & Grill & Banquet services at the Doubletree by Hilton Hotel Pomona, including assisting in the development of the modern Italian cuisine to be featured at the restaurant, and the Banquet production processes for the Hotel’s Catering Department. Areas of direct responsibility include contributing to the menu and concept development, as well as assisting the Executive Sous Chef in the daily management of the culinary team. This position will also collaborate with the hotel’s General Manager and report to the General Manager of the restaurant and the F&B Director. Deliver products and services to proactively exceed the needs and expectations with anticipatory approaches to servicing our Vita Restaurant & Doubletree Hotel Pomona customers, through providing balanced hands-on leadership in training and guiding our service & management teams' efforts to provide an incredibly positive and professional work environment, that consistently meets our financial goals. Essential duties and responsibilities • Restaurant, Patio, and Bar Concept & Menu Development & Implementation, • Multiple Outlets Operations-Multi tasking (Banquets & In-Room-Dining), • Recruiting/Training of Service Personnel, • Proven Experience in Modern California Italian Cuisine Concept experience, • Proven Experience-Multiple Outlet Responsibility, including Banquet production, • Restaurant/Hotel Opening Experience Preferred, • Strong Written& Verbal Communications Skills, • Proficient in Word, Excel and PowerPoint programs, • Strong P&L Analytical Skills, • Culinary Arts Degree Preferred, • Purchasing/Sourcing experience, including establishing inventory controls of F&B Product & Supplies., • Understanding of OSHA, TIPS, and other pertinent training programs., • Knowledge of Food Safety/Health Department, including Federal, State and local ordinances as they pertain to operating Restaurant & Bar, and Catering events., • Experience in developing F&B Promotions that target revenue enhancements, seasonal demands, and timely identification of current F&B trends.
