As Food & Beverage Manager, you will be responsible for leading and overseeing all Food & Beverage operations across The Vineyard Hotel, ensuring exceptional guest experiences, strong financial performance, and consistently high standards of service across every outlet and event. Reporting directly to the Operations Manager, you will provide leadership, guidance, and support to the Restaurant Manager and Conference & Events Manager. You will play a pivotal role in creating a collaborative and guest-focused culture, ensuring all teams work together to deliver memorable hospitality experiences that reflect the reputation and standards of The Vineyard. This is a highly visible, hands-on leadership role requiring a strong operational presence throughout the business. You will lead from the front, supporting service periods, engaging with guests, coaching and developing your teams, and ensuring luxury service standards are consistently achieved across restaurants, bars, private dining, conferences, weddings, and events. Working closely with the Executive Chef, Wine Director, and wider hotel leadership team, you will contribute to the overall success of the hotel, driving operational excellence, commercial performance, employee engagement, and guest satisfaction. You will be expected to identify opportunities for improvement, implement best practices, and ensure the Food & Beverage division continues to evolve and thrive. The successful candidate will be an experienced hospitality professional who combines outstanding leadership skills with strong commercial awareness and a genuine passion for delivering exceptional guest experiences. • Provide leadership, direction, and support to all Food & Beverage departments., • Coach, mentor, and develop departmental managers to achieve both individual and business goals., • Conduct regular performance reviews, development discussions, and succession planning activities., • Support recruitment, onboarding, and retention initiatives to build engaged and capable teams., • Foster a positive, inclusive, and professional culture that encourages collaboration, accountability, and continuous improvement., • Lead by example, acting as a role model for service excellence and company values., • Oversee the day-to-day operation of all restaurant and bar outlets., • Support the Restaurant Manager in delivering exceptional service standards and achieving departmental objectives., • Work closely with the Head Sommelier and Wine Director to maintain an industry-leading wine and beverage programme., • Support the ongoing development of wine lists, cocktail menus, beverage offerings, and promotional activities., • Ensure all outlets deliver consistently high levels of guest satisfaction and operational efficiency., • Monitor quality standards, stock levels, service delivery, and profitability across all beverage operations., • Oversee the Food & Beverage delivery for conferences, meetings, private dining experiences, weddings, banquets, and special events., • Work closely with the Conference & Events Manager and Executive Chef to ensure flawless planning and execution., • Support event preparation, staffing, operational logistics, and guest experience delivery., • Maintain a visible presence throughout major events, providing support where required to ensure successful outcomes., • Take ownership of departmental budgets, forecasts, and financial performance., • Monitor revenue, labour costs, stock costs, and expenditure to maximise profitability., • Identify and implement revenue‑generating opportunities and upselling initiatives., • Monitor business trends and performance data to support decision‑making and continuous improvement., • Deliver departmental targets, KPIs, and commercial objectives while maintaining exceptional service standards., • Build meaningful relationships with guests and create memorable experiences., • Actively engage with guests throughout the hotel and respond to feedback., • Resolve guest concerns quickly, professionally, and effectively., • Support VIP guests, special occasions, and bespoke guest requests., • Ensure personalised service standards are consistently delivered across all areas of responsibility., • Ensure all Food & Beverage operations comply with food safety, health and safety, licensing, and legal requirements., • Oversee stock control, purchasing activities, supplier relationships, and inventory management., • Minimise waste and maximise profitability through robust cost‑control procedures., • Support continuous improvement initiatives to enhance efficiency, service standards, and team performance., • Attend management meetings and contribute to business planning and strategic objectives., • Work collaboratively with all department heads to support the wider success of the hotel. You are an experienced and passionate hospitality professional with a proven background in leading Food & Beverage operations within a quality hotel, luxury hospitality, or premium restaurant environment. You understand what exceptional service looks like and have the ability to inspire, motivate, and develop teams to consistently exceed guest expectations. Equally comfortable on the restaurant floor, behind the scenes, or within management meetings, you thrive in a dynamic environment where no two days are the same. You are commercially minded and capable of balancing operational excellence with financial performance, understanding how strong leadership, guest satisfaction, and profitability work together to drive success. You build positive relationships at every level, communicate effectively, and bring energy, professionalism, and enthusiasm to everything you do. Most importantly, you are a visible leader who enjoys being part of the operation, supporting your teams during service and creating an environment where both colleagues and guests feel valued. • Previous Food & Beverage management experience within a hotel, luxury hospitality, or high-quality restaurant environment., • Experience leading multiple Food & Beverage outlets and operational teams., • Strong leadership and people management experience, including managing departmental leaders., • Excellent understanding of restaurant, bar, private dining, conference, and event operations., • Proven experience delivering exceptional guest experiences., • Strong commercial awareness and financial management skills., • Experience managing budgets, costs, labour, and departmental performance., • Excellent communication, relationship‑building, and interpersonal skills., • A hands‑on approach with a passion for hospitality and service excellence., • Previous experience within a luxury hotel environment., • WSET qualification or strong wine knowledge., • Experience overseeing conference, banqueting, wedding, and large-scale event operations., • Food Safety qualification., • First Aid qualification., • Fire Marshal qualification., • Passionate about hospitality and creating exceptional guest experiences., • Inspiring leader with the ability to engage, motivate, and develop teams., • Professional, approachable, and confident in a guest‑facing environment., • Strong organisational, planning, and problem‑solving skills., • Commercially focused with the ability to identify opportunities to improve performance., • Calm and effective under pressure in a fast‑paced operational environment., • Positive, proactive, and solutions‑focused in your approach., • Flexible and adaptable, with the willingness to work evenings, weekends, public holidays, and peak business periods as required., • Committed to maintaining the highest standards of professionalism, presentation, and service delivery.
