Main Responsibilities • Assist in the Management of all food and sundry costs through rigorous stock control measures, • Analyse, and present monthly profit and loss commentaries with follow on corrective activity as directed by the Head Chef, • Assist with Daily / weekly payroll and food cost analysis in accordance with forecasted and materialised revenue levels to ensure optimal performance with overspend corrected within the same trading period and as directed by the Head Chef, • To consistently conduct time in motion studies across all kitchen functions in accordance with technology and process adoption identifying incremental efficiencies without impact to the culinary brand proposition, and as directed by the Head Chef, • Assist the Head Chef work with the Food and Beverage Manager to translate annual strategic business plans into considered departmental scorecard targets and associated activity plans, • Assist the Head Chef in developing a multi skilled culinary team that delivers payroll flexibility., • To be highly visible at key service periods focusing attention to detail on culinary delivery, • Maintain team focus on 'the Customer's need' with service personalisation About you: We love to welcome people with different experiences and from different places into our Apex family.     Prep Chef – Daytime Shifts Soul Sushi, Edinburgh Part-time – flexible days available Soul Sushi is a Japanese takeaway in Edinburgh specialising in sushi burritos, sushi and poke bowls. We are looking for a reliable and organised Prep Chef to help with our morning kitchen preparation and get everything ready for service. This is a daytime role, with shifts generally around 10am–4pm. We are flexible on the number of days worked each week and can consider applicants looking for 2–5 shifts per week, depending on availability. Your main focus will be preparing ingredients before and during opening, setting up the kitchen for service and helping prepare orders during the lunchtime period. Your responsibilities • Prepare rice, vegetables, fillings, sauces and other ingredients following our recipes and portion guidelines., • Complete the kitchen opening checklist and ensure everything is ready for service., • Prepare sushi burritos, poke bowls and other menu items during the lunch period., • Check ingredient quality, rotate stock and label and store food correctly., • Follow our food hygiene and allergen procedures., • Keep workstations, utensils and equipment clean and organised., • Replenish ingredients and communicate any shortages or outstanding preparation to the next shift. What we’re looking for • Previous experience in a commercial kitchen or food preparation role is preferred., • Good basic knife skills and the ability to follow recipes consistently., • Someone punctual, dependable and able to organise their workload., • Confidence working independently once trained and supporting the team during busy periods.
