Were looking for a self-sufficient Chef de Partie to be the beating heart of our new restaurant. We launched as a cafe in January 2024, and weve since grown into an Italian restaurant pitching just below fine-dining standards. We expanded into the neighbouring unit last year and opened a seating area with 35 covers plus a private dining area upstairs. At Otto, were dedicated to using high-quality, where possible, local ingredients and try to find a balance between respecting tradition and introducing new culinary concepts. We open Wednesday to Saturday from 12:00 - 22:30, so with prep beforehand, this role would require roughly 45 hours per week. As a Chef de Partie at Otto you will: Supervise Daily Section Operations: Oversee and coordinate the daily activities in your designated section of the kitchen (e.g., grill, pastry, sauces). Ensure efficient food production and timely service within your section, maintaining high standards. Assist in Menu Execution: Contribute to the preparation and presentation of dishes as per the menu and seasonal offerings. Work closely with the Sous Chef and Head Chef to execute daily specials or new menu items. Food Preparation & Cooking: Prepare and cook dishes to the highest standards, following recipes and portion control guidelines. Ensure consistency in quality, presentation, and taste for all dishes prepared within your section. Maintain Cleanliness and Safety Standards: Keep your work area clean, organised, and in compliance with health and safety regulations. Maintain personal hygiene and ensure kitchen equipment is regularly cleaned and well-maintained. The ideal candidate will take pride in their work, have an eye for detail, and be self-motivated - you will be key to the restaurants success. You must believe in kitchen efficiency & cleanliness, have a proven track record managing sections in a busy kitchen environment and have the flexibility required to work in a small dynamic team.
