In September 2021, maman founders elisa marshall benjamin sormonte released the highly anticipated maman: the cookbook. Our ideal candidate is an experienced culinary leader who brings energy, respect, and passion into their everyday interactions. You are a mentor and problem solver who effectively develops high-performing teams and fosters a collaborative, four-walls culture in every location. you have extensive experience with multi-unit leadership and maintain operational excellence by upholding the highest standards of quality, consistency, safety and brand integrity. You have strong culinary expertise in French, Mediterranean, and American cuisines, and are fluent in both English and Spanish. Position Summary The Regional Culinary Director oversees all Back of House operations across maman's North Carolina locations, leading the Culinary Management team and partnering closely with the Regional director to ensure alignment between culinary execution and overall business strategy. The Regional Culinary Director drives culinary excellence, operational consistency, financial performance, and team development across North Carolina. Through hands-on leadership, strategic oversight, and strong mentorship, the Regional Culinary Director ensures each kitchen operates efficiently and profitably while upholding maman's standards, brand identity, culture and values. Essential Responsibilities Culinary Leadership Standards ● Oversee all kitchen operations across multiple locations to ensure consistency, quality, and execution of brand standards ● Maintain rigorous food quality, presentation, and portion control standards ● Train and coach BOH teams to ensure proper execution of all culinary initiatives ● Drive successful menu rollouts and ensure seasonal updates are executed flawlessly, ensuring brand standards are met and portioning and control is consistent across all markets ● Ensure compliance with all health, safety, and sanitation regulations as directed by State and local governments ● Audit ServSafe Food Handler certifications for management at all locations Operational Excellence ● Oversee the performance and accountability of each region by reviewing weekly reports, conducting store visits, and holding weekly team meetings as needed ● Lead, coach, and inspire Culinary Management team and onsite Kitchen Leaders ● Conduct performance reviews, provide ongoing coaching and foster career development conversations ● Partner with the regional director COO to foster a collaborative, four-walls environment in each location ● Ensure Kitchen Leaders uphold training, service, and culinary standards and drive alignment between store-level operations and company-wide goals Inventory, Cost Control Financial Performance ● Enforce best practices for inventory management, ordering procedures, and portion control ● Oversee COGS guidelines and food cost targets to protect and improve margins ● Analyze PL statements and implement corrective action plans where necessary ● Optimize labor scheduling and productivity across all locations ● Manage regional vendor relationships and purchasing strategies to ensure cost efficiency and product quality ● Utilize various technologies and tools to analyze and strategize financial performance Clear Communication Hands-On Support ● Maintain open communication with Kitchen Leaders, Regional Director, Executive Culinary Director COO regarding progress, challenges, and opportunities ● Support cross-functional projects and activations, ensuring alignment with brand standards ● Provide insights to leadership regarding staffing needs, market trends, and operational improvements Qualifications Skills ● 7+ years of progressive culinary leadership experience, including 2+ years in a multi-unit or regional leadership role ● Strong financial acumen with proven ability to manage budgets, labor, and costs effectively ● Proficiency in Google Workspace expected; experience with third-party delivery platforms, MarginEdge, and Harri preferred ● Extensive knowledge of State and local food safety regulations across North Carolina ● Excellent leadership, communication, and problem-solving skills ● Willingness and ability to travel frequently throughout Charlotte area. ● Energetic, approachable, adaptable with experience building and leading high-performing teams ● Bi-lingual in English and Spanish What We Offer At maman, we're proud to provide a supportive and people-first environment where leaders can thrive and grow. Position Summary The Barista is responsible for crafting and serving high-quality, maman standard beverages while delivering exceptional service. This role requires technical coffee skills, efficiency, and a guest-first mindset. The Barista consistently upholds maman beverage standards, maintains a clean and DOH compliant workstation, and builds strong relationships with guests through warm, personalized hospitality. Essential ResponsibilitiesBeverage Quality Production • Prepare and serve the full beverage menu in accordance with maman's established recipes and beverage standards., • Ensure beverage consistency, quality, and presentation across all drinks., • Maintain service time standards, with drinks served within 8 minutes on weekdays and 10 minutes on weekends., • Demonstrate proficiency in espresso preparation, milk texturing, and basic latte art., • Accurately read and execute POS tickets, including sizes, modifiers, and dine-in versus to-go orders. Guest Experience Hospitality • Deliver warm, genuine, and personalized service to every guest, consistently following all steps of service (Smile, Engage, Name, Thank You) in every guest interaction., • Build rapport with returning guests and foster relationships with regulars through thoughtful, personalized service and providing updates on seasonal specials and menu changes., • Communicate menu offerings clearly, including ingredients and allergy-related information, to support informed guest choices., • Anticipate guest needs and provide proactive, attentive service., • Address guest concerns professionally and courteously, escalating issues to the leader on shift when necessary. Service Operations • Maintain an organized, efficient bar workflow to support speed and accuracy during service., • Operate in close coordination with front-of-house team members to ensure seamless service, supporting other positions during slower periods, embracing cross-training and a team-first approach., • Follow established steps of service and operational procedures to ensure consistency and quality., • Flexibility to work with various FOH positions including counter service, runner and/or server based on business needs. Cleanliness Maintenance • Maintain the barista station to DOH standards at all times, including proper care of rags, steam wands, pitchers, grinders, pitcher rinsers, counters, and milk storage., • Complete opening and closing tasks as assigned, including FIFO practices, DOH checks, and end of day email correspondence with collaboration with the rest of the FOH team., • Support daily, weekly, and monthly deep-cleaning tasks as assigned., • Promptly report safety hazards, equipment issues, or maintenance needs to the leader on shift. Team Support • Work collaboratively with FOH and BOH teams to maintain smooth service and high standards., • Demonstrate flexibility by assisting in multiple roles as business needs require., • Maintain a positive, professional demeanor at all times, even in fast-paced or high-pressure situations., • Perform additional tasks and ad hoc projects as assigned to support daily operations. Qualifications Required: • Minimum of 2 years of barista experience., • Ability to pass a barista skills evaluation., • Working knowledge of espresso preparation, micro-foam milk texturing, and basic latte art., • Strong understanding of POS tickets, modifiers, and beverage offerings., • Ability to work a flexible schedule, including weekends, holidays, and special events, unless pre-approved to work a specific schedule at hiring as per business needs., • Ability to multitask and stay organized in a fast-paced environment., • Ability to stand for extended periods and perform light physical tasks related to the role, including being able to lift up to 25 lbs. Preferred: • Experience in a high-volume or specialty coffee environment., • A positive attitude, strong sense of humor, and ability to contribute to a fun, team-oriented culture., • Passion for hospitality and a sweet tooth for cookies is a plus., • Attention to detail and a strong sense of ownership over the guest experience., • Strong product knowledge, including allergy awareness., • Demonstrated ability to learn quickly and adapt to a unique workplace culture.
