Job Description Assistant Manager – Frenchy’s Stone Crab & Seafood Market Location: Dunedin, FL Reports To: General Manager Position Summary The Assistant Manager supports the General Manager in the daily operations of Frenchy’s Stone Crab & Seafood Market. This role ensures that all retail, seafood processing, and distribution activities run efficiently while maintaining the highest standards of product quality, safety, and customer service. The Assistant Manager also plays a key role in procurement, inventory management, and operational accountability. Key Responsibilities Operations & Supervision • Oversee daily market operations, including seafood sales, processing, storage, and customer service., • Supervise and train team members to ensure proper handling, labeling, and display of seafood products., • Ensure compliance with company policies, food safety regulations, HACCP, and sanitation standards., • Create, manage, and adjust employee schedules to ensure adequate coverage for all shifts, including weekends and peak periods., • Coordinate staff assignments and communicate schedule changes promptly to maintain smooth daily operations., • Monitor labor needs and collaborate with the Market Manager to optimize staffing efficiency and reduce overtime. Procurement & Vendor Management • Coordinate with approved vendors and suppliers to ensure timely and cost-effective purchasing of seafood, packaging, and supplies., • Monitor product quality, availability, and pricing to optimize purchasing decisions., • Verify purchase orders, deliveries, and invoices for accuracy and maintain proper documentation., • Communicate with crabbers, suppliers, and transportation partners to manage inbound and outbound shipments. Inventory Management & Month-End Closing • Oversee daily inventory tracking for seafood, dry goods, and operating supplies., • Conduct monthly physical inventory counts and reconcile variances with accounting., • Maintain accurate inventory records and ensure proper rotation, storage, and labeling., • Identify and analyze inventory trends, waste, and shrink to improve operational efficiency. Customer Service & Sales • Support retail operations by ensuring a positive customer experience through product knowledge and service excellence., • Handle escalated customer concerns and resolve issues promptly., • Assist in merchandising, pricing, and promotions to drive sales and maintain product freshness. Administrative & Reporting • Maintain accurate records of purchases, inventory adjustments, and daily operational logs., • Support audits, inspections, and other compliance-related activities. Qualifications • Minimum 3 years of experience in retail, seafood, or food industry management., • Strong understanding of seafood products, handling, and quality standards., • Experience with procurement, vendor relations, and inventory control., • Proficiency in Excel, POS, and inventory systems (experience with IT Retail or similar preferred)., • Excellent organizational and communication skills., • Ability to work flexible hours, including weekends and holidays during peak season. Physical Requirements • Ability to lift up to 50 lbs and work in cold environments (cooler/freezer). Shortly after high school, Frenchy and some friends took a vacation to Clearwater Beach, Florida. So in 1981, Frenchy’s Original Café, the quaint restaurant on a tiny side street, opened its doors to the beach community (see images below). The Café became an instant success, with lines of people stretching out the door on a daily basis. To ensure a constant source of fresh fish to the Café, Frenchy purchased a fleet of fishing boats and eventually opened Frenchy’s Seafood Company. With these resources in place, Frenchy’s became “famous” for its fresh Super Grouper sandwich, spawning the opening of four more restaurants: Frenchy’s Saltwater Café in 1989, Frenchy’s Rockaway Grill in 1991, Frenchy’s South Beach Cafe in 2003, and Frenchy’s Outpost Bar & Grill in 2013. Four decades running, the Frenchy’s restaurants are still regarded as a staple for delicious, fresh-from-the-Gulf seafood at reasonable prices in a fun and casual beach atmosphere. In 2010, Frenchy continued building his mini empire on Clearwater Beach with the purchase of the former Olympia Motel, located on East Shore Drive. After months of extensive renovations, Frenchy’s Oasis Motel opened, boasting a 15 unit waterfront property, classically designed in retro 60’s, offering fantastic modern accommodations. Frenchy's also owns the Clear Sky Restaurant Group.Michael Preston was born in Quebec, a French-speaking province of Canada. His family moved to Ann Arbor, Michigan when he was in middle school.
