We are looking for a Pastry Sous Chef who will help our Pastry Chef manage production with 4 to 5 other team members to produce cookies, cakes, quiche, croissants as well as other pastries and desserts for our bakery plus our 6 restaurant locations and many wholesale customers. We are seeking a self-motivated individual. Somebody who has a strong professional skill set, attention to detail, and a focus for high quality. Expectations: • Strong pastry experience with production background, • Works efficiently at all tasks, • Expectations of high quality of self and helps others achieve the same, • Is self-directed, • Good at receiving constructive feedback, • Strong interpersonal communication skills, • Write production list or adjust lists based on production needs, • Advise pastry chef when pars are low, • Accurately scaling recipes, • Mixing, scooping and baking cookies, muffins, etc., • Making mousse, fillings, frosting, etc., • Assembling tarts, quiche, cakes, etc., • Producing, shaping croissants, Danishes and puff pastry, • Some product ordering from vendors, • Communicate with co-workers and managers, • Assist pastry chef with managing changes to menus, • Manages pastry staff when chef is not scheduled
