We’re hiring a Commissary Production Team Member in our DC Commissary! The Commissary Food Production Team Member prepares, portions, and packages high-quality food items for distribution to our shops. This role follows standardized recipes, food safety protocols, and daily production plans to meet volume, quality, and on-time delivery targets. Company Core Values & Expectations: • Vibrant - You are abundantly happy, fun, passionate, playful, and kind, • Integrity - You are honest, caring, real, and always strive to do the right thing and take pride in what you do, • Belonging - You will work as a team to make people feel welcome, • Energy - You are active, proactive, and work hard to make things happen, • Demonstrates VIBES, • Has shown ability to work with others and display teamwork, • Ability to recognize when something is wrong and quickly alert the Manager on Duty so issues can be resolved, • Ability to take ownership on everything they do, • Good communication skills, • Production & Prep, • Execute standardized recipes and batch sheets; scale ingredients accurately., • Perform prep, cooking, chilling, and portioning to spec (weight, count, yield)., • Operate equipment (bagel machines, slicers, kettles, ovens, vacuum sealers, fryers, plancha, etc.) safely and correctly., • Set up and break down workstations; maintain organized & clean station, • Quality & Food Safety, • Adhere to HACCP, GMPs, allergen controls, and sanitation SOPs at all times., • Record 3-factor checks (temp/time/appearance) at critical control points., • Label products with item name, lot/date, allergens, and use-by per policy., • Verify ingredients meet quality standards; report defects or non-conformances., • Receiving & Inventory Support, • Assist with receiving as needed: verify counts, temperatures, and product condition., • Follow FIFO in storage; minimize waste and record yield variances., • Replenish stock and communicate low inventory to the lead/manager., • Packaging & Distribution, • Portion and pack according to packaging specs; apply correct labels., • Stage completed orders by shop, • Documentation & Communication, • Complete batch records, logs, and cleaning checklists accurately., • Communicate issues (equipment, shortages, safety) promptly to leadership., • Ability to work and communicate effectively with commissary and kitchen staff, • Report any equipment malfunction or maintenance needed to the MOD, • Maintain professional conduct at all times, • Ability to stand/walk for 8+ hours; lift/push/pull up to 50 lbs., • Ability to work holidays and weekends, • Able to squat, bend, stoop, push and reach, • Ability to stand and walk for prolonged periods, • Able to read, write and effectively communicate, • Ability to have flexibility in schedule, • Ability to get to and from all shops via transportation of choice in a timely manner, • Ability to work in hot (cooking area) and cold (walk-in 34–38°ree;F) environments., • 1+ year in a commissary, central kitchen, or high-volume food production preferred., • Knowledge of basic culinary techniques, scaling, and yields., • Familiarity with HACCP, GMPs, allergens, and cold-chain best practices., • Ability to read/execute recipes, batch sheets, and production plans in English and/or Spanish, • Comfortable using digital scales, thermometers, and basic production equipment., • Starting wage: $17.95/hour, plus an additional estimated $3-7/hr in tips for all positions, • Exciting opportunities for growth and development!
