This is a senior role within an iconic pub and brewery business about to open a third site. Food sits at the heart of the operation, which includes a heritage pub, a tap room/event space at the brewery and a new all-day operation soon to be open. Menus are rooted in quality, local produce, confident flavours and consistent delivery. You will lead the entire culinary operation, shape the food culture and be a visible, hands-on presence across all sites. You will be fully active in service and prep, this isnt an office based position. In the early days there will be a focus on assessing standards and culture in the original site, whilst preparing for opening of the new site. THE ROLE Set the tone for food, standards and kitchen culture across all outlets. Lead, recruit, motivate and develop teams across different styles of service. Create kitchens that are calm, organised and collaborative. Oversee daily service for each outlet Work closely with senior leadership, front-of-house and bar teams. Champion cleanliness, structure and consistency. Lead on all food related compliance THE BUSINESS SIDE Own food and labour costs across all outlets. Manage purchasing, suppliers and stock with a practical approach. Review performance regularly and make informed decisions. Balance creativity with commercial awareness. Drive food sales across all sites, identifying untapped opportunities. FOOD & IDENTITY Deliver high-quality food that fits the business ethos. Lead menu development, seasonal changes and one-off events. Focus on good sourcing, strong technique and flavour-led cooking. Stay connected to Manchesters food scene. ABOUT YOU Experience as an Executive Chef or senior Executive Sous, or experience as a Head Chef with a proven track record looking for that next step. Ideally experienced in the establishment of a new venture from the ground up. A great communicator with everyone within, and connected to, the business.
