Job Description Sous Chef | Ancora Cafe & Bakery Website: We are looking for a Sous Chef that likes to be involved with all facets of the kitchen. The ideal candidate will have a strong background in food production and kitchen management. As a Sous Chef, you will play a crucial role in supporting the Head Chef in managing kitchen operations, leading service shifts, ordering, team development, and ensuring high standards of food quality, safety, and presentation are maintained. We take great pride in our business and the relationships we have built with our customers and staff over the years. Our customers have come to expect speedy, consistent, and delicious products from us, and that is what we always aim to deliver. Unused PTO is paid out., • Be proficient in all areas of line cooking, prep, and cleaning, • Lead shifts using delegation, coaching, and checklists, • Train others as necessary in all aspects of the kitchen: Line Cooking, Prepping, Dishwashing, • Provide constructive feedback to help improve operations and offerings, • Ensure cleanliness and food safety standards are being met throughout the kitchen operation, • Assist Head Chef with the following:, • monitoring of stock of prepared ingredients and unprepped product, • creating daily prep lists, • ordering of produce and other special orders, • maintaining organization of the kitchen, • monitoring the quality and accuracy of prepped items and finished dishes, • implementing new policies and menu items, • monitor labor, sales, and COGS data, • Collaborate with Head Chef & BOH Ops Manager on development of specials and new menus, • ServSafe certification is a plus, but not required, • Ability to work on your feet for eight hours a day, • Must be able to lift at least 40 pounds at a time on a regular basis, • A minimum 1 year previous experience in a kitchen leadership role is strongly preferred, • High level of professionalism and respect for teammates and customers, • Comfortable working in a fast-paced environment, • Cleanliness and proper knowledge of food safety is key, • Excellent communication (verbal and written), strong critical thinking, and organization skills, • Solid knife skills and a strong background in kitchen prep, • Base $17 to $19/hour (DOE), • Additional $5 to $7+/hour from tip pool (included in paycheck), • This position has a guaranteed hourly rate of $24 for non-training hours.
