Position Summary: We are seeking a dedicated and experienced Chef to lead kitchen operations across our juvenile detention facility. This role is responsible for overseeing meal preparation, ensuring food safety compliance, managing kitchen staff, and maintaining high standards of service. The Chef will also serve as a mentor to culinary apprentices, supporting their training and employment growth in alignment with the Kitchens for Good mission to transform lives through culinary arts. Essential Functions & Responsibilities: • Lead and manage daily kitchen operations, ensuring timely and high-quality meal service for youth and staff., • Ensure compliance with National School Breakfast and Lunch Program standards., • Ensure meals are served with care and respect, reflecting Kitchens for Good’s commitment to quality customer service., • Monitor food presentation, portion control, and taste to meet internal standards and client expectations., • Maintain compliance with HACCP and sanitation protocols., • Ensure all kitchen operations meet the requirements outlined in the meal service contract with the Youth Transition Campus., • Maintain accurate documentation and reporting to support contract compliance, including meal counts, inventory logs, and sanitation records., • Collaborate with administrative and probation staff to ensure service delivery aligns with contractual expectations and regulatory standards., • Oversee inventory management, ordering, and vendor relations., • Maintain compliance with all health, safety, and sanitation regulations., • Maintain kitchen budget and cost controls., • Ensure cleanliness and organization of all kitchen and storage areas., • Inspect and maintain kitchen equipment, recommending repairs or replacements as needed., • Serve as the main point of contact with the Department of Probation (DOP) regarding kitchen operations, reporting, and coordination., • Respond to feedback and concerns from staff and youth with professionalism and empathy., • Ensure all meals and interactions reflect Kitchens for Good’s service standards., • Interview, hire, train, and supervise kitchen staff., • Develop and manage staff schedules to ensure adequate coverage., • Conduct performance evaluations and provide coaching and support., • Provide hands-on training and mentorship to culinary apprentices, fostering skill development and professionalism., • Collaboration Skills, • Customer/Client Focus, • Flexibility, • Stress Management/Composure, • Excellent Communication This job operates in a kitchen environment, housed with equipment such as an oven, stove, dishwasher, slicer, coffee machine, steamer, mixer and chef’s knives. The employee is frequently exposed to heat colder than normal temperatures, steam, fire and noise. The kitchen is located at the Youth Transitional Center (detention center for youth) in 2801 Meadow Lark Drive San Diego, 92123 near our Door of Hope Campus. As part of their daily responsibilities, employees will interact with juveniles in custody, Kitchens for Good staff, and detention center personnel, maintaining a respectful, professional, and supportive atmosphere. Physical Demands: The physical demands described are representative of those that must be met by an employee to successfully perform the essential functions of this job. The employee is required to stand for extended periods of time, sit, reach, lift, bend, kneel, stoop, climb, push, and pull items weighing 50 pounds or less. The position requires manual dexterity, auditory and visual skills, and the ability to follow written and oral instructions and procedures. Position Type/Expected Hours of Work This is a full-time, non-exempt position scheduled at 40 hours a week. Includes weekend and evening shifts. AM shifts and PM shifts available and may vary depending on the needs of the organization. Overtime may be required based on operational needs and special events. Travel: Employee may be expected to travel to additional KFG locations to provide coverage during staffing shortages.
